Sate Maranggi

Sate ini sangat terkenal di Purwakarta. rasa nya manis kaya rasa walau tanpa saus apapun.  karena kangen kalo harus ke Purwakarta jauh sekali…..ku putuskan membuatnya sendiri dan tentu saja sesuai dengan selera lidahku…..semoga berkenan. Satay Maranggi is the famous satay from Purwakarta, West Java. Satay Maranggi have a rich taste even we eat without sauce.

SATE MARANGGI 

Bahan/ingredients:

1000 gr daging sapi utk rendang/has dalam (kambing or ayam)/1000 gr beef (tenderloin), goat or chicken,
100 grm lemak sapi/kambing (optional)/ beef or goat fat
50-60 tusuk sate/ 50-60 pcs satay skewers
Kecap manis utk memoles. Sweet soy for glaze

Bumbu halus/ground Spices :

12 bawang merah. 12 shallots
6 bawang putih. 6 garlic
5 cabe merah kriting (boleh ditambahkan cabe rawit bila suka pedas). 5 red chilli
2 sdt ketumbar bubuk. 2 tsp coriander powder
1/2 sdt lada hitam bubuk. 1/2 tsp black pepper powder
1/4 sdt jintan bubuk. 1/4 tsp cumin powder.
2 sdt garam. 2 tsp salt
1 sdm gula merah. 1 tbsp brown sugar
3 cm jahe. 3 cm ginger
3 cm lengkuas. 3 cm galangal
2 sdt nanas parut. 2 tsp grated pineapple

Acar Tomat/Tomato Pickels:

2 tomat merah, potong dadu kecil. 2 pcs fresh red tomatoes,cut on small dice
10 cabe rawit, iris. 10 red chilipadi, slices.
Garam dan lada secukupnya. Some salt and pepper
Kemangi (bila suka). Lokal basil(optional)

Cara/Method:

1. Potong2 daging dadu 2x2cm, cutting beef on dice 2×2 cm
2. Potong2 lemak tipis, cutting fat skinny
3. Haluskan bumbu dan lumurkan ke daging dan diamkan minimal 3 jam di kulkas. Make it pure all the spice and marinade beef with the spice minimal 3 hour  and put on refrigerator
4. Tusuk daging dan lemak selang seling. Skewer beef and fat alternately
5. Panggang sate hingga matang rata dan pada panggangan terakhir oles dgn kecap manis. Grill satay until welldone and before  the last  grill, glaze with sweet soy
6. Sajikan dengan acar tomat dan lontong or nasi. Serve satay with Tomato Pikels,
