Bumbu Dasar Base Gede – Basic Base Gede Spices

 

Semua bahan segar. All fresh ingredients

Bahan/ingredients:

200 gr lengkuas. 200 gr galangal.

150 gr jahe. 150 gr ginger.

60 gr kunyit. 60 gr turmeric.

40 gr kencur. 40 gr fragrant ginger.

100 gr bwg merah. 100 gr shallot.

60 gr bwg putih. 60 gr garlic

20 gr lada bubuk. 20 gr pepper

30 gr ketumbar bubuk. 30 gr coriander powder.

20 buah cabe rawit. 20 pcs chilli.

1 sdm terasi udang. 1 tsb shrimp paste.

3 btg sereh. 3 stalk lemon grass.

6  lbr daun salam. 6 pcs bay leaves

1 sdm gula merah. 1 tbs brown sugar

200 ml Minyak utk menggoreng. 200ml oil for fry

Cara/Method:

1. Panaskan minyak. Heat oil.

2. Kupas dan potong jahe, lengkuas, kencur, kunyit, bwg merah dan bwg putih. Prehead oil. Peel and cut ginger, galangal, fragrant ginger, turmeric, shallot and garlic.

3. Masukkan semua bahan segar ke dlm minyak panas kecuali daun salam dan cabe. Goreng 1/2 matang. Add all fresh ingredients except bay leaf and chilli, fry halfdone.

4. Tuang kedalam blender termasuk minyaknya, masukkan lada bubuk, ketumbar bubuk, terasi, cabe, gula merah. Blender hingga halus. Pour all igredients into blender with oil too. Add pepper, coriander powder, shrimp paste, chillies and brown sugar.

5. Tumis bumbu base gede hingga benar2 matang dgn daun salam. Well cook all spices of base gede with bay leaf.

 

Note:

Bumbu base gede ini bisa utk masakan apapun khas bali. Bila berwarna merah  dan pedas tinggal menambahkan cabe merah besar.

Base Gede Spices can use fot anykind of Balinese food. If need red color and spices, add big red chilli and small chilli
