Ayam Woku – Chicken Woku

 

Bahan/ingredients:

1 ekor ayam kampung ukuran sedang, cuci dan potong. 1 a whole chicken medium size, wash and cut.

1 sdm air jeruk nipis. 1 tbs lime juice

1/2 sdt garam. 1/2 tsp salt

5 daun jeruk. 5 lime leaves

1 sereh, dikeprak. 1 stalk lemon grass, crust

2 btg daun bawang iris 1 cm. 2 stalk leeks, cut on 1 cm

50 gr daun kemangi. 50 gr local basil leaves.

350 ml air buah tomat. 350 ml tomato juice.

Bumbu Halus/ground spices:

10 bwg merah. 10 shallot

10 cabe rawit (sesuai selera). 6 chillies (adjust)

2 cabe merah besar. 2 big red chillies.

3 cm jahe. 3 cm ginger

5 butir kemiri. 5 pcs hazelnuts

1 sdm gula merah. 1 tbs brown sugar.

1 sdt garam. 1 tsp salt

2 cm kunyit. 2 cm turmeric

1/2 sdt ketumbar bubuk. 1/2 tsp coriander powder

3 sdm minyak utk menumis. 3 tbs oil for saute

Cara/Method:

1. Lumuri ayam dgn air jeruk dan garam, sisihkan selama 1 jam. Marinade chicken with lime juice and salat, set aside for 1 hour.

2. Panaskan minyak dan tumis bumbu hingga harum, masukkan sereh dan daun jeruk, aduk hingga benar2 matang. Heat oil. Saute ground spices, add lemon grass and lime leaves. Stir and wellcook

3. Masukkan ayam dan air tomat, masak hingga air menyusut dan ayam empuk dan masukkan pula daun bawang. Add chicken and tomato juice, and cook until chicken is tender and the water shrinks and add leek.

4. Masukkan daun kemangi, aduk bentar matikan api, spy kemangi warnanya tetap hijau. Add basil leaves , stir briefly turn off the heat , so that the color is still green basil.

Note: 

Ayam dapat diganti daging babi or ikan. Chicken can change with pork or fish
