C H A R S I U

 

Bahan/ingredients:

1 kg babi kapsim, potong setebal 2 cm memanjang dgn lebar kisaran 15-20cm. 1 kg pork kapsim, 2 cm thick slices lengthwise with a wide range of 15-20cm

#daging babi dapat diganti daging dada ayam. Pork can be change with chicken breast

Bumbu/seasoning:
6 siung bwg putih. 6 garlic.
1 sdm angkak, rendam 1 menit, tiriskan. 1 tbsp angkak (chinese herbs), soak for 1 minutes, drain.
1 sdt ngohiong bubuk. 1 tbsp five spice powder.
1 sdm saus hoisin. 1 tbsp hoisin sauce.
3 sdm kecap asin. 3 tbsp spy sauce
1 sdm saus tiram. 1 tbsp oyster sauce
1/2 sdm garam. 1/2 tbsp salt.
1/2 sdt pala bubuk. 1/2 tsp nutmeg powder.
1/2 sdt lada hitam bubuk. 1/2 tsp grated pepper.
4 sdm madu. 4 tbsp honey
2 sdm gula merah. 2 tbsp brown sugar.
1 sdm minyak wijen. 1 tbsp sesame oil.
1 sdm arak xao xing. 1 tbsp wine xao xing

Cara/Method:
1. Haluskan bwg putih dan angkak, campur dgn bumbu lainnya. Ground garlic and angkak, mix with other seasoning.
2. Bumbui daging babi, inapkan semalam dgn wadah tertutup. Dapat disimpan di frezer kondiai mentah. Marinate the pork with seasoning, refrigerate overnight with a closed container. Can be stored in a raw state frezer
3. Proses dgn air fryer 160C selama 30 menit, jgn lupa dibalik per sisi dlm kurun waktu 15 menit or oven 180C selama 30 menit (tergantung besar kecil oven). Process with airfryer 160C for 30 minutes , do not forget reversed by side within 15 minutes or 180C oven for 30 minutes (depending on the small oven)
4. Charsiu siang disajikan dgn apa saja. Charsiu can be served with anything.

Saus manis/Sweet Sauce:
1 sdm saus hoisin. 1 tbsp hoisin sauce
1 sdm saus plum. 1 tbsp plum sauce
1 siung bawang putih, parut halus. 1 cloves ground garlic.
50 ml air. 50 ml water
# campur dan didihkan, kentalkan dgn maizena. Mix and boil, thickening with corn strack

Saus pedas/spicy sauce:
1 siung bawang putih. 1 clove garlic
4 buah cabe rawit. 4 pcs chili padi.
1/2 sdm hoisin sauce. 1/2 tbsp hoisin sauce
30 ml air. 30 ml water.
#finely ground all ingredients, and boil.

Saus Asin/Salty Sauce:
1 sdm tauco. 1 tbsp fermented soyabean.
1/2 sdm saus hoisin. 1/2 tbsp hoisin sauce.
1 sdm saus plum. 1 tbsp plum sause
1 siung bawang putih. 1 clove garlic.
1/4 sdt ngohiong bubuk. 1/4 tsp five spice powder
50 ml air. 50 ml water
#Haluskan taoco dan bawang putih, campur bahan, rebus, dan kentalkan dgn maizena. Finely ground fermented soyabean, boil and thickening with cornstrach.
