Bandeng Bumbu Bali – Milkfish in Balinese Spices

 

Bahan/Ingredients:

2 ekor bandeng, potong 5-6. 2 pcs. 2 pcs milkfish, cut on 5-6 pcs

1 tahu besar, potong dan goreng. 1 big tofu, cut & fried.

1 sereh, keprak. 1 lemon grass, crust

5 daun jeruk. 5 lime juice.

1 daun salam. 1 bay leaf

150 ml air. 150 ml water

2-3 sdm minyak sayur utk menumis. 2-3 tbs vege oil or saute

Bumbu halus/ground spices:

5 cabe merah besar, buang biji. 5 big red chilli, seedless.

4-5 rawit merah (sesuaikan). 4-5 chillies (optional)

5 bwg merah. 5 shallot.

6 bwg putih. 6 garlic

1 sdt ketumbar bubuk. 1 tsp coriander powder

2 cm jahe. 2 cm ginger

2 cm lengkuas. 2 cm galangal

1 sdm gula merah. 1 tbs brown sugat

1 sdm kecap manis. 1 tbs dark sweet soy sauce

1 sdt garam (sesuaikan). 1 tsp salt (adjust)

Cara/method:

1. Goreng bandeng hingga matang.

Panaskan minyak, tumis daun jeruk, daun salam dan sereh, dan bumbu halus, tumis hingga wangi dan warna menjadi merah matang, masukkan bandeng dan tahu, aduk hingga rata. Heat oil and saute lime leaves , bay leaf and lemon grass , and ground spices, stir fry until fragrant and color change red, add milkfish and tofu.

2. Add water, aduk perlahan dan masak hingga air menyusut. Add water, gently stir, cook until water reduce.
