SOTO AYAM LAMONGAN

Bahan/ingredients:
1 ekor ayam kampung ukuran besar, potong 4 bagian. 1 chicken big size, cut on 4
2 btg daun bawang, slice. 2 stalk green onion, slice
2 btg sere. 2 stalks lemongrass
10 lbr daun jeruk. 10 pcs lime leaves
3000 ml air. 3000 ml water
3 sdm minyak utk menumis bumbu. 3 tbsp oil for saute herbs

Pelengkap/complimentary:

Sambal. Chillie paste
Koya (krupuk udang dan bwg putih goreng, dihaluskan). Koya (shrimp crackers and fried garlic, ground)
Jeruk nipis. Lime
5 telor rebus, iris belah 2. 5 boiling eggs, cut into 2.
Kecap manis (pilihan). Dark soy sauce (optional)
Kripik kentang (kentang diiris tipis, rendam dlm air, 1 sdt garam dan 1 sdt baking power, goreng). Potato crackers (thinly slices potato, soak into the water, 1 tsp salt and 1 tsp baking powder, fried)
Daun seledry, iris. Celery leaves, slice
1 bgks soun, rendam air dan tiriskan 1 pack glass noddle, soak on water and strain.
100 gr toge, seduh air panas dan tiriskan. 100 gr beansprout, pour with hot water, strain
100 gr kol/gubis, iris halus. 100 gr cabbage, finely slice.
5-6 btr telur, rebus. 5-6 pcs boiling eggs

Bumbu halus/ground spices:
12 bwg merah. 12 shallot
10 bwg putih. 10 cloves garlic
4 cm lengkuas. 4 cm galangal
2 cm jahe. 2 cm ginger
2 cm kencur. 2 cm fragrant ginger
4 cm kunyit. 4 cm turmeric
1 sdm ebi kering. 1 tbs dry shrimp
1 sdm ketumbar bubuk. 1 tbs coriander powder.
1/2 sdt jintan. 1/2 tsp cumin.
5 kemiri. 5 candlenut.
1-2 sdm garam. 1-2 tbsp salt .
1 sdt lada bubuk. 1 tsp pepper.

Cara/methods:
1. Didihkan air, masukkan ayam, daun jeruk dan sere. Boil water, add chicken, lime leavea and lemongrass
2. Goreng bwg merah, bwg putih, jahe, lengkuas, kencur, ebi dan kunyit 1/2 matang. Haluskan bersama bahan bumbu yg lain, lalu tumis hingga harum dan matang, masukkan ke dlm kuah ayam.
Fried shallot, garlic, ginger, galangal, fragrant ginger, dry shrimp and turmeric medium well. Ground with other ingredients of ground spices. Stirfry until fragrant and wellcook, add into chicken shoup.
3. Masak hingga ayam empuk, angkat dan iris tipis. Masukkan bwg daun ke dlm soup. Cook until chicken tender. Lift up and thinly slice, add green onion into the soup.
4. Sajikan bersama pelengkap. Serve with complimentary.
