Nasi Bakmoy – Bakmoy Rice

Bakmoy harusnya pakai babi, kata “bak” artinya babi, krn alasan kesehatan aku lbh sering pakai daging ayam. Bakmoy should use pork , “bak” means pork , because of health reasons I often use chicken meat .

Bahan/ingredients:
1 ekor ayam, bagi 4 atau 500gr daging babi. 1 chicken, cut on 4 or 500gr pork
2 cm jahe, keprak. 2 cm ginger, crush
1 tahu besar, potong dadu, goreng 1/2 matang (kalo suka tahu). 1 pcs big tofu cut on small dice, fried 1/2 cook (tofu to taste)
1 buah wortel. 1 carrot
2 sdm daun seledri, cincang. 2 tbs celery chop
6 butir telor rebus. 6 pcs boiling eggs.
1500-2000 ml air. 1500-2000 water

Bumbu/seasoning:
3 bwg putih, cincang. 3 garlic, chop
3 sdm kecap manis. 3 tbs dark soy sauce
1 sdm saus tiram 1 tbs oyster sauce.
1/4 sdt merica bubuk. 1/4 tsp ground pepper
2 sdt garam (disesuaikan). 2 tsp salt (to taste)

Bumbu sup/soup seasoning:
1500 ml-2000 ml kaldu ayam. 1500-2000 ml chicken broth.
4 Bwg putih, keprak. 4 garlic, crush.
2 cm jahe. 2 cm ginger.
Garam dan lada secukupnya. Some salt and pepper.
Minyak wijen (bila suka). Sesame oil (to taste)

Baso udang/shrimpball:
250 gr daging udang cincang halus. 250 gr finely chop shrimp
3 sdm tepung kanji. 3 tbs cornstrach
1 sdm kecap asin. 1 tbs soy sauce
1/2 sdm saus tiram. 1/2 tbs oyster sauce.
1/2 sdm kecap ikan. 1/2 sdm fish sauce.
2 siung bwg putih, haluskan. 2 cloves garlic, ground.
1 kuning telur. 1 egg yolk
2 sdt minyak wijen. 2 tsp sesame oil.
Campur semua bahan dan goreng memanjang atau pake 2 sendok kecil, goreng kecoklatan, angkat. Mix well all ingredients, deepfry with long shape, cut or used 2 spoons. Fried until golden brown.

Pelengkap/complimentary:
Daun bawang. Green onion
Bwg merah goreng. Fried shallot
Daun seledri,iris. Celery, slice.

Sambel petis/Sambal Shrimp Paste:
2 buah bwg merah. 2 pcs shallot
2 siung bwg putih. 2 cloves garlic
5 cabe rawit. 5 pcs chilipadi
1/4 sdt trasi. 1/4 tsp shrimp paste
3 sdm petis. 3 tbsp black shrimp paste.
Garam secukupnya. Some salt.
30 ml air. 30 ml water
#Haluskan bwg merah, bwg putih dan cabe, tumis hingga matang benar, campur dgn trasi, petis, air dan garam, masak lagi. Ground shallot, garlic and chilipadi, saute until well cook, mix with shrimp paste, black shrimp paste, water and salt, and cook again.

Cara/methods:
1. Rebus air, masukkan ayam, tambahkan jahe. Boiling water, add chicken, ginger and carrot.
2. Bila ayam sdh empuk, angkat, bila sdh dingin potong dadu. When chicken tender, cut on small dice.
3. Panaskan minyak. Masukkan dan tumis bwg putih, hingga harum, masukkan ayam dan tahu juga semua bumbu, beri kaldu ayam, masukkan telurr, bila air sdh susut taburi seledri aduk, angkat. Heat oil. Add and stirfry garlic until fragrant, add chicken, tofu, eggs and seasoning, add 200 ml chicken broth, saute until the chicken broth reduce, add celery, stir, and lift up.
4. Sajikan dgn baso udang, telor dibelah dan pelengkap. Serve with shrimpball, 1/2 egg and complimentary.
