Perkedel Tuna – Tuna Croquette


PERKEDEL TUNA – TUNA CROQUETTE

Bahan/Ingredients:
1 kaleng tuna, tiriskan. 1 can tuna, drain.
1 sdm bwg putih goreng, haluskan.1 tbs fried garlic, ground
1 sdm bwg merah goreng, haluskan. 1 tbs fried shallot, ground.
1 sdm daun seledri, iris2 halus. 1 tbs celery leaves, finely slice
500 grm kentang, kukus, kupas kulit dan haluskan. 500 gr potatoes, steam, pell off the skin and ground
1 siung bwg putih, cincang. 1 cloves garlic, chop
1 kuning telur
Tepung roti utk pelapis Bread crumb for coating
1 putih telur utk pelapis. 1 white egg for coating
1 sdm minyak sayur utk menumis.1 tbs vege oil for saute.

Bumbu/seasoning:
1/2 sdt garam. 1/2 tsp salt
1/4 sdt lada bubuk. 1/4 tsp ground pepper
1/4 sdt pala bubuk. 1/4 tsp ground nutmeg
1 sdm bwg putih goreng. 1 tbs fried garlic
1 sdm bwg merah goreng. 1 tbsp fried shallot.

Saus Mayo/Mayo Sauce:
1 sdm mayones. 1 tbs mayonaise(Cupid brand made in Japan)
1 sdt madu. 1 tsp honey
2 sdt saus sambal. 1 tsp chili sauce.
1 sdt saus tomat. 1 tsp tomato sauce.

Cara/Method:
1. Panaskan minyak, masukkan dan tumis bwg putih hingga harum, masukkan tuna kaleng dan seledri, sampai agak kering, sisihkan. Head oil, add and saute garlic until fragran, add tuna can and celery, stir fried until enough dry, set aside.
2. Campurkan tuna dgn kentang yg sdh dihaluskan. Mix tuna with ground potatoes.
3. Haluskan bwg merah dan bwg putih goreng lalu campur dgn bumbu lain dgn kentang, bentuk adonan hingga habis.. Ground fried shallot and garlic and mix all seasoning with potatoes, make a shape croquette dough forms until exhausted.
4. Simpan di frezzer 15 menit. Refrigerated for 15 minutes.
5. Panaskan minyak banyak utk menggoreng teknik deepfry (agar perkedel tdk pecah). Heat oil for deep fry.
6. Ambil perkedel, celupkan ke putih telur, gulingkan ke tepung roti dan masukkan ke minyak panas, goreng hingga golden brown, angkat dan tiriskan. Take potato cake, dip on white egg, cover with bread crumb and dip on hot oil, frying until golden brown, and drain.
7. Sajikan bersama saus or hidnagan lain. Serve with sauce or others dish.

NOTE: MENGGORENG PERKEDEL 1 SISI CUKUP SEKALI BALIK. FRYING CROQUETTE, FLIP ONE TIME ONLY
