Penyetan Sambal Mangga

Bahan/ingredients:
2 potong ikan pe panggang. 2 pcs grilled “Pe” fish.
Bumbu utk ikan/spices for fish:
3 cabe merah besar, buang biji. 3 big red chilie, seedless
2 cabe rawit. 2 chilie padi/cayenne
4 bwg merah. 4 shallot
2 bwg putih. 2 garlic
2 daun jeruk. 2 pcs lime leave
1/2 sdt ketumbar bubuk. 1/2 tsp coriander powder.
1/4 sdt garam. 1/4 tsp salt
1 sdt gula merah. 1 tsp broqn sugar.
1 sdm kecap manis. 1 tbs sweet dark sauce

1/2 kg iga sapi bumbu base gede. 1/2 kg beef ribs inbase gede spices

Sambal mangga:
1/2 buah mangga muda iris tipis spt korek api, sisihkan. 1/2 pcs young manggo, slice like matches, set aside
10 cabe rawit. 10 pcs chilie padi/cayenne
6 bwg merah. 6 shallot.
2 bwg putih. 2 garlic
1/2 sdt terasi. 1/2 sdt belacan/shrimp paste.
Garam secukupnya. Some salt
#goreng 1/2 matang kecuali garam dan trasi. Haluskan semua bahan termasuk trasi dan garam, dan campur dgn mangga. Fried 1/2 cook all ingredients eccept salt and belacan. Ground all ingredients and add some salt and belacan, and mix with young manggo#

Cara/Metod:
1. Haluskan bumbu utk ikan dan lumurkan pada ikan pe panggang, sisihkan 30 menit. Panggang. Ground spices for fish, and marinated grilled “pe”fish, set aside for 30 minutes, grill.
2. Rebus iga sapi dgn 1 lt air dan 3 sdm bumbu base gede, hingga empuk, tiriskan, panggang. Boil beef ribs with 1 lt water and 3 tbs base gede spices until ribs tender, drain dan grill.
3. Sajikan ikan pe, iga dan sambal mangga. Serve grilled “pe” fish, ribs and manggo chili.
