SIOBAK – Roasted Pork Belly


S I O B A K – ROASTED PORK BELLY

Bahan/ingredients:
1000gr babi samcam tusuk dgn ujung pisau kulitnya, lumuri dgn garam dan baking powder bagian kulitnya.1000gr pork belly, poke the pork skin with the tip of a knife and springkle with salt  and baking powder on skin.

Bumbu/seasoning:
1 sdt tauco, dihaluskan. 1 tsp fermented beancurd, ground.
1sdt ngohiong, 1 tsp fivespices
1/2 sdt garam. 1/2 tsp salt
1/2 sdt black pepper bubuk, 1/2 tsp black pepper
1/2 sdt air jeruk nipis. 1/2 tsp lime juice
1 sdm madu. 1 tbs honey
1 sdt ketumbar bubuk. 1 tsp coriander powder.
Cuka secukupnya. Some vinegar

Saus plum & hoisin/Plum & Hoisin Sauce:
2 siung bwg putih, parut. 2 cloves gralic, grated.
1/2 sdm plum sauce. 1/2 tbs plum sauce.
2 sdt hoisin sauce. 2 tsp hoisin sauce.
40 ml air panas. 40 ml hot water.

Saus taoco/fermented bean sauce:
1 sdm taoco. 1 tbsp fermented bean.
2 sdt saus hoisin. 2 tsp hoisin sauce.
2 siung bwg putih. 2 cloves garlic.
40 ml air. 40 ml water.
2 sdt madu. 2 tsp honey.
cairan pengental(maizena dan air). Thickener batter (cornstarch and water)

Cara/Method:
1. Iris memanjang daging tanpa menyentuh bag kulitnya.sliced lengthwise meat without touching the skin.
2. Campur bumbu dan oleskan pada bag daging dgn rata (kecuali kulit). Mix seasoning and finely spread on the meat of pork
3. Taruh di grill dgn kulit menghadap ke atas dan diamkan semalam di chiller dgn terbuka (utk mengurangi kadar air pada daging babinya)).
Put on the grill with the skin facing upwards and let stand overnight in a chiller with an open (to reduce the water on pork)
4. Rebus 5 menit bagian kulitnya saja dgn sedikit air (tanpa rebuspun hasil juga oke kok asal oles cuka nya banyakan). Boil 5 minutes only part of the skin with a little water (without boiling the skin, the result ok).
5. Panaskan oven 200C (api bawah) dan letakkan babi dgn kulit menghadap atas pd rak grill, bagian bawa grill taruh wadah utk menampung tetesan minyak, oven selama 1 jam. Preheat oven 200C (bottom fire) and place the pork with the skin facing up pd grill rack , grill parts take place container accommodating for oil droplets , oven for 1 hour
6. Keluarkan dr oven dan oles dgn cuka bag kulitnya saja dan masukkan kembali ke oven dgn agak mendekatkan pada api atas dgn jarak 25 cm, panggang dgn suhu 250C (api atas) selama 15 menit. Remove from oven and rub the skin with vinegar parts and put back into the oven with a little closer to the fire(around 25cm) on the roast with a temperature of 250C (upper fire) for 15 minutes.
7. Bila ada yg gosong, buang bagian hangus dgn pisau. When there who scorched , dispose of it with the knife .
8. Diamkan selama 30 menit atau sdh dingin dan potong2. Dan sajikan dgn saus plum & hoisin. Let stand for 30 minutes or cooled and cut. Serve with plum & hoisin sauce.
8. Cara masak saus/how to cook saus: campur bahan dan rebus 5 menit. Mix all and boil for 5 minutes
