Mie Sancam Manis – Sweet Pork Belly Noodle

Bahan/ingredients:
5-10 porsi mie. 5-10 portion noodle
1 kg daging babi sancam. 1 kg pork belly.
5 siung bawang putih, iris. 5 cloves garlic, slice.
3 buah jamur kering, rendam air panas dan iris tipis. 3 pcs dried shiitake mushrooms, soak on hot water and finely slice
4 lbr kulit jeruk mandarin kering, ukuran 8x8cm (boleh pakai or tdk). 4 pcs dried mandarin orange peels 8x8cm, (optional)
1000ml air. 1000ml water
6 telor rebus. 6 boiling eggs
2 sdm minyak utk menumis. 2 tbs oil for saute

Bumbu/seasoning:
1 sdt ngohiong bubuk. 1 tsp five spice powder
3 sdm kecap asin. 3 tbs light soy sauce
4 sdm kecap manis (Black Gold). 4 tbs dark soy sauce (Black Gold brand)
1 sdm saus jamur. 1 tbs mushroom sauce.
2 sdm arak xao xing. 2 sdm xao xing chinese rice wine.
1/2 sdt lada hitam bubuk. 1/2 sdt ground black pepper
1/2 sdm air jahe. 1/2 tbs ginger juice

Pelengkap/complimentary:
1. Saus jahe/ginger sauce:
6 cm jahe muda parut, peras airnya utk bumbu. 6 cm grated young ginger, take the ginger juice for seasoning.
2 bwg putih cincang halus. 2 finely chopped garlic.
Garam dan lada secukupnya. Some salt and papper.
1 sdt minyak wijen. 1 tsp sesame oil.
30 ml air panas. 30 ml hot water
1 sdt air lemon. 1 tsp lemon juice
Campur semua bahan dan sisihkan. Mix all ingredients and set aside.

2. Sambal bwg putih/Chili & garlic paste:
10 cabe rawit. 10 pcs chili padi
1 cabe merah besar. 1 red big chili.
3 bwg putih. 3 garlic
Garam dan lada secukupnya. Some salt and pepper
1 sdt gula. 1 tsp sugar
50 ml air. 50 ml water.
* campur dan blender semua bahan dan didihkan. Mix and blender all ingredients and boil.
3. Selada. Lettuce
4. Bawang merah goreng. Fried shallot.

Cara/Method:
1. Rebus sancam dgn 1 ltr air, selama 30 menit, potong dan sisihkan. Boil pork belly with 1 ltr water around 30 minutes, cut and set aside.
2. Panaskan minyak. Tumis bwg putih hingga harum masukkan daging babi, aduk hingga berubah warna. Heat oil. Saute garlic until fragrant, add pork, stir until pork change color.
3. Masukkan bumbu, tumis hingga harum, masukkan air rebusan babi hingga terendam dan juga telur rebus, masak dgn api kecil hingga air berkurang 70% dan babi empuk(sekitar 1 jam). Add seasoning and saute until fragrant, add pork broth until soak and boiling eggs. Simmer until reduce water 70% and pork tender (around 1 hour)
3. Penyajian/how to serve: taruh mie yg di bumbui lada secukupnya, 1/2 minyak babi/minyak bawang putih dan 1/2sdm kecap asin diatas mangkuk, beri babi kecap dan pelengkap. Put noodles, which has been flavored with pepper to taste, 1/2 tbs lard/oil garlic and 1/2 tbs soy sauce on bowl and add sweet pork and complimentary
