Tahu Bulat Isi Sayur & Udang – Veggie & Shrimp Tofu Balls

Bahan/ingredients:
2 pak tahu bulat mentah (@ isi 10). 2 pack raw tofu balls (@10 tofu balls).

Isian/filling:
1 wortel, kupas dan serut. 1 carrot, pell off and grated.
100 gr toge. 100 gr beansprout.
5 buah jamur shiitake segar, iris tipis dan pot kecil. 5 fresh shiitake mushroom, slice & small cut.
75 gr udang tanpa kult. 75 gr shrimp, skinless.
1 btr telur, kocok. 1 beaten egg.
5 btg daun bwg kecil, iris. 5 stalks green onion, slice.
3 siung bwg putih, cincang. 5 cloves garlic, chop
2 buah bwg merah, cincang. 2 pcs shallot, chop
2 cm jahe muda, parut. 2 cm grated young ginger root
Cabe rawit bila suka. Cayanne to taste.
2 sdm minyak sayur. 2 tbs veggie oil.
500 ml minyak utk menggoreng. 500 ml oil for deepfry

Bumbu/seasoning:
1 sdm saus tiram. 1 tbs oyster sauce.
2 sdt kecap raja rasa. 2 tsp raja rasa soy sauce.
1 sdt kecap ikan. 1 tsp fish sauce.
Lada hitam bubuk secukupnya. Some ground black pepper.
1/2 sdm xao xing(boleh di skip). 1/2 tbs xao xing (optional)

Bahan pencelup/batter:
80 gr tpg serba guna. 80 gr all purpose flour.
20 gr tpg beras. 20 gr rice flour.
1/2 sdt baking powder. 1/2 tsp baking powder.
1/4 sdt garam. 1/4 tsp salt
Lada putih bubuk secukupnya. Some ground white pepper.
120 ml air es. 120 ml cold water.

Saus petis/shrimp paste sauce:
2 sdm petis. 2 tbs shrimp paste
2 siung bwg putih. 2 cloves garlic.
3 cabe rawit (sesuaikan). 3 pcs cayenne (to taste).
30 ml air panas. 30 ml hot water.
Garam secukupnya. Some salt

Cara/Methods:
1. Cara menggoreng tahu bulat/ how to cook tofu balls: Panaskan minyak utk menggoreng hingga mengeluarkan asap. Masukkan tahu bulat, biarkan 5 menit, aduk tahu, tiap 3 menit aduk tahu spy isi tahu kosong dan goreng tahu hingga kecoklatan dan tetap bulat saat dingin. For Heat the frying oil to smoke. 2. Cara masak isian/ how to cook filling:
Panaskan 2 sdm minyak sayur, masukkan bwg putih, bwg merah dan jahe tumis hingga harum, masukkan udang, masak hingga berubah warna, masukkan telur kocok, buat orak arik. Heat 2 tbs veggie oil, add garlic, shallot and ginger, sauté until fragrant, add shrimp, sauté until changing color, add beaten egg as cook scrambel egg.
3. Masukkan xaoxing, aduk, masukkan bahan isian dan bumbu, aduk rata hingga matang, matikan api, dan biarkan dingin. Add xao xing, stir, add other filling ingredient and seasoning, stir until cook, turn off fire. Lets cool.
4. Gunakan gunting tahu bulat untuk membuat lubang memasukkan isian. use scissors to make a hole out round insert stuffing
5. Panaskan minyak utk menggoreng. Campur dan aduk rata bahan pencelup. Masukkan tahu kedalam pencelup, dan goreng hingga kuning, angkat, lakukan hingga selesai. Head oil for deepfry. Mix and stir batter ingredients. add tofu into batter and fry until golden, remove and do it to finish.
6. Haluskan dan campur bahan saus petis dan tumis. Ground and mix shrimp paste ingredients and saute.
7. Sajikan hangat dgn saus petis. Cocok utk snack di sore hari bersama secangkir kopi atau teh. Juga sebagai menu pembuka. Serve warm with shrimp paste. Suitable for a snack in the afternoon with a cup of tea or coffee. Also for appetizer

Note:
Sisa pencelup, dapat digoreng dijadikan tenkatsu/tempura scraps. Left over of batter, fried can be Tenkatsu / tempura scraps
