Ayam Pandan ala Thai – Goi Hor Bai Toey – Thai Pandan Wrapped Chicken

Bahan/ingredients:
1 ekor ayam probiotik, buang tulang dan potong2. 1 prebiotik chicken, take out the bones and cut.
30 lbr daun pandan utk membungkus ayam. 30 pcs pandan leaves for wrap chicken

Bumbu/seasoning:
6 siung bawang putih. 6 cloves garlic.
2 cm jahe. 2 cm ginger.
1 sdm minyak wijen. 1 tbs sesame oil
5 btg daun ketumbar. 5 stalks cilantro.
1 sdm saus inggris. 1 tbs worcestershire sauce.
1 sdm saus tiram. 1 tbs oyster sauce.
2 sdm gula merah. 2 tbs brown sugar.
2 sdm santan. 2 tbs coconut milk.
1 sdm kecap asin. 1 tbs soy sauce.
2 sdm kecap ikan. 2 tbs fish sauce.

Saus karamel/caramel sauce:
2,5 sdm kecap asin. 2,5 tbs soy sauce.
3 sdm gula. 3 tbs sugar.
5 sdm air. 5 tbs water.
1 sdt maizena + 1 sdm air utk pengental. 1 tsp corn stract + 1 tbs water for thickener
1 sdm biji wijen. 1 tbs sesame seed.

Cara/methods:
1. Campur dan haluskan batang ketumbar, bwg putih, gula merah, saus tiram, kecap asin, minyak wijen, saus inggris, saus tiram, jahe, santan dan maizena. Mix and ground cilantro, garlic, brown sugar, oyster sauce, soy sauce, sesame oil, worcestershire sauce, oyster sauce, ginger, coonut milk and corn stract.
2. Campur dan aduk ayam dan bumbu yg sdh dihaluskan. Simpan di wadah tertutup dan diamkan di lemari es selama minimal 4 jam. Mix and stir chicken with ground seasoning. Store in a closed container and let stand in refrigerator for at least 4 hours.
3. Bungkus ayam dgn daun pandan, kukus selama 15 menit. Proses kukus akan membuat aroma pandan meresap pada ayam. Wrapping chicken with pandan leaves steam for 15 minutes. Steamed process will make the pervasive aroma of pandan chicken.
4. Cara membuat saus karamel/how to cook caramel sauce: panaskan panci saus, masukkan gula biarkan menjadi caramel, masukkan air dan aduk, masukkan bwg putih, kecap asin. Masukkan larutan maizena, aduk dan masukkan biji wijen, aduk dan pindahkan ke piring sauce. Heat sauce pan, add suger until caramelize, add water, stir fast , add garlic and soy sauce. Masukkan cornstract for thickener, stir and add sesame seed, stir and place into sauce dish.
5. Panaskan minyak. Goreng tenggelam ayam hingga kecoklatan. Angkat dan tiriskan. Heat oil. Deepfry chicken until golden. Lift and drain.
6. Sajikan panas bersama saus karamel. Serve hot with caramel sauce.
