Sup Mie Sapi ala Taiwan – Taiwanese Beef Noodle Soup

Bahan/ingredients:
1000gr daging sengkel. 1000gr beef shark/chuck.
Mie sesuai selera. Noodle favorite.
Saya pakai mie ini. I use this noodle.

2000 ml air utk merebus daging. 2000 ml water for boiling beef.

Bumbu utk merebus daging/seasoning for boiling beef:
1 sdt lada shezhuan utuh. 1 tsp whole shezhuan peppercorn.
1 sdt lada hitam utuh. 1 tsp whole black pepper.
10 buah pekak/bunga lawang. 10 pcs star anis.
2 cm jahe, iris. 2 cm ginger, slice.
1 lbr daun salam. 1 lbr bayleave.
3 sdm kecap manis. 3 tbs dark soy sauce.
2 sdm kecap jamur. 2 tbsp mushroom soy sauce
1 sdm kecap asin. 1 tbs soy sauce.
1 sdm kecap raja rasa (bila ada). 1 tbs raja rasa soy sauce (optional).
2 cm kayu manis. 2 cm cinammon.
8 siung bwg putih. 8 cloves garlic
6 bunga cengkeh. 6 pcs cloves.
Garam secukupnya. Some salt to taste.

Pelengkap/complimentary:
Sayur bokcoi rebus. Boiling
6 butir telur rebus. 6 boiling eggs
Daun ketumbar. Cilantro
Cabe rawit iris. Slice chilipadi.
Topanchiang.

Cara/Methods:
1. Rebus air, masukkan daging dan telur rebus. Boiling water, add beef and boiling eggs.
2. Masukkan bumbu rempah kecuali kecap manis, kecap asin, kecap raja rasa dan xao xing kedalam kantung rempah. Dan masukkan kantung ke dlm rebusan daging bersama bumbu lainnya. Add all herbs into herbs bag accept dark soy sauce, soy sauce, raja rasa soy sauce and xaoxing. Add herbs bag into boiling beef and all other seasoning.

3. Rebus dgn api kecil hingga daging empuk, angkat dan potong2. Simmer until beef tender, lift up and cut the beef.
4. Rebus mie favoritemu. Letakkan diatasnya daging dan sayur, tuangi sup. Taburi bwg daun, daun ketumbar, cabe iris dan topanchiang sesuai selera. Boiling your favorite noodle, put beef, vegge, pour the soup. Sprinkle with green onion, cilantro, chilipadi and topanchiang to taste.
