Fried Squid ala Nelayan Makasar

Bahan/ingredients:

500 gr cumi ukuran jari, cuci dan ambil tulangnya. 500 gr squid finger size, wash and take out the bone.
3 cm jahe, iris. 3 cm ginger, slice.
1 sdt garam. 1 sdt salt
750 ml air utk merebus. 750 ml water for boiling.
20 gr asam jawa, rendam dgn 30 ml air panas. 20 gr java tamarin, soak in 30 ml hot water.
4 siung bwg putih parut halus. 4 cloves finely grated garlic
Minyak utk menggoreng. Oil for deepfry.

Sambal mangga muda petis makasar/Sambal young manggo shrimp paste makasar:
2 sdm petis makasar. 2 sdm makasar shrimp paste
30 gr mangga muda, iris korek api. 30 gr young manggo, jullien slice.
3 cabe rawit, iris. 3 pcs chilipadi, slice.
2 bwg merah iris. 2 pcs shallot, slice.
2 buah jeruk cui. 2 pcs cui lime.

Cara/Methods:
1. Rebus air dgn jahe dan garam hingga mendidih 5 menit, masukkan cumi rebus 2 menit, angkat dan tiriskan. Boiling water with ginger and salt for 5 minutes, add squid, boiling for 2 minutes, lift up and strain.
2. Campur cumi dan air asam dan bwg putih parut dan diamkan 30 menit. Marinate squid with tamarin water and grated garlic, let stand for 30 minutes
3. Panaskan minyak, masukkan cumi goreng hingga kering, tiriskan. Heat oil, add squid and fried until golden brown, strain.
4. Campur semua bahan sambal.
5. Sajikan cumi goreng dgn sambal. Serve fried squid with sambal.
