Usus Ayam Bumbu Bali – Chicken Instestine in Balinese Spices

Bahan/ingredients:
500 gr usus ayam. 500 gr chicken instetine.
500 ml air. 500 ml water.
2 cm jahe, keprak. 2 cm ginger, crust.

Bumbu/seasoning:
8 buah bwg merah. 8 pcs shallot
4 siung bwg putih. 4 cloves garlic.
6 cabe merah besar. 6 pcs red big chili.
4 cabe keriting. 4. 4 pcs red curly chili.
5 rawit (sesuai selera). 5 chilipadi (to taste)
2 cm jahe. 2 cm ginger
1 buah tomat segar. 1 fresh tomato.
1 sdm air asem jawa. 1 tbs tamarin water
2 sdt garam. 2 tsp salt
1 sdm gula merah. 1 tbs brown sugar
1 sdm kecap manis. 1 tbsp dark soy sauce
1 sdt terasi. 1 tsp shrimp paste
100 ml air. 100 ml water.

Cara/method:
1. Haluskan dan tumis bumbu hingga harum. Ground and saute seasoning until fragrant.
2. Rebus usus ayam dgn jahe selama 5 menit. Buang air. Boil chicken intestine with ginger for 5 minutes. Pour out the water.
3. Masukkan air, aduk rata , masak hingga matang, dgn api sedang. Add water, stir well and cook well.
4. Masukkan usus ayam dan biarkan hingga air menyusut. Enter the chicken intestine and allow it to shrink water.
5. Setelah dingin tusuk usus ayam dgn tusuk sate dan panggang sebentar. After a cold skewer chicken intestine with a skewer and grilled briefly.
5. Siap disajikan. Ready to serve.
