Bihun Goreng Sawi Asin – Fried Vermicelli with Fermented Veggie

Bahan/ingredient:
2 buah bihun kering (merk Erawan), rendam dan tiriskan. 2 pcs dry vermicelli, soak and drain.
2 lbr sawi asin, cuci, peras dan iris halus. 2 pcs fermented veggie, wash, squeeze and finely slice
200 grm daging ayam iris spt korek api. 200 grm chicken slices like matchsticks.
4 bwg putih, cincang halus. 4 garlic, finely chops
2 telur bebek, kocok lepas, 2 duck eggs, beaten off
¼ buah paprika merah, iris. ¼ pcs red bell pepper, finely slice.
¼ buah paprika kuning, iris. ¼ pcs yellow bell pepper, slice.
¼ buah bawang bombay, iris. ¼ pcs onion, slice.
Daun ketumbar utk hiasan. Cilantro for garnish
3 sdm minyak sayur utk menumis. 3 tbsp veggie oil for saute

Bumbu/seasoning:
½ sdm kecap jamur. ½ tbsp mushroom soy sauce
1 sdm kecap asin. 1 tbs soy sauce
1 sdm kecap raja rasa. 1 tbs soy sauce Raja Rasa
1/2 sdm kecap ikan. 1/2 tbsp fish sauce
1/2 sdt minyak wijen. 1/2 tbsp sesame Oil.
1 sdm saus tiram. 1 tbs oyter sauce
1/2 sdm arak xao xing. 1/2 tbs chinese white wine Xao Xing
1/2 sdt lada hitam bubuk. 1/2 tsp blackpepper powder

Cara/Method:
1. Bumbui ayam dgn 1 sdt kecap asin, 1 sdt kecap raja rasa dan sedikit lada hitam bubuk, sisihkan. Seasoning the chicken with 1 tsp soy sauce, 1 tsp raja rasa soy sauce and a pitch of black pepper powder, set aside
2. Panaskan minyak. Masukkan bwg putih, aduk, masukkan daging ayam tumis hingga berubah warna, masukkan telur kocok. Heat the oil. Add garlic, stir, add chicken saute until changing color add beaten egg, stir.
3. Masukkan xao xing, aduk rata, masukkan bahan lain, bihun dan bumbu masak hingga bihun lemas,
Enter xao xing, stir, add another condiment, vermicelli, and seasoning, cook until limp,lift and serve

Note:
1. Bisa menggunakan daging ayam or babi. can use chicken or pork
2. Minyak bisa menggunakan minyak sayur or minyak babi(hrs diakui dgn minyak babi lbh enak). Oil can use vegetable oil or lard (admittedly with lard better)
3. Kalo masak bicap, ada sisa kuah, bisa dipakai masak mie hokkian dan bihun goreng. If cooking Sweet Pork, can be used to cook noodles, glass noodle and vermicelli
