Nasi Ayam Hainam – Hainam Chicken Rice

Bahan/ingredients:
1 ekor ayam kampung. 1 pcs chicken.
1 wortel, kupas. 1 carrot. Skinless.
2 btg bwg daun (bag putih saja). 2 stalks green onion.
1 buah bwg bombay, buang kulit. 1 pcs onion skinless.
Garam secukupnya. Some salt to taste.
½ sdt lada bubuk. ½ tsp ground pepper.
5 siung bwg putih parut. 5 cloves grated garlic.
2 cm jahe parut. 2 cm grated ginger.
2 sdt minyak wijen. 2 tsp sesame oil.
Garam dan lada secukupnya. Some salt and pepper
3 ltr air utk merebus. 3000ml water for boiling.

Saus/sauce:
*Saus merah/Chili sauce: cabe, garam, bwg putih dan jahe parut di goreng, air, haluskan dan didihkan. chilipadi, salt, fried garlic and grated ginger, water, ground and boiling.
*Saus Jahe/Ginger sauce:
Jahe parut, bwg putih dan bwg merah di cincang halus, goreng dgn minyak sayur dan minyak wijen panas beri garam dan lada. Grated ginger, an chopped garlic and shallot, fried with veggie oil and sesame oil.

Bahan nasi Hainam/Hainam rice ingredients:
2 cup beras, cuci bersih. 2 cups rice, wash.
1/2 cup ketan putih, rendam 3 jam (optional). ½ cup glutinous rice soak 3 hours. (optional).
3 siung bwg putih, diparut. 3 cloves garlic, grated.
2 bwg merah, diparut. 2 pcs shallot, grated.
½ sdm minyak wijen, utk menumis. ½ tbsp sesame oil, for saute.
2¾ cup kaldu rebusan ayam. 2¾ cups chicken broth.
Garam secukupnya. Some salt.
½ sdt lada. ½ tsp ground pepper.1 cm jahe, parut. 1 cm ginger, grated.

Cara/method:
1. Cara masak ayam hainam/how to cook hainam chicken:
Rebus air hingga mendidih, masukkan ayam dan semua bahan. Tumis bwg putih dan jahe dgn minyak wijen hingga harum dan masukkan dlm sup. Bila ayam cukup empuk diangkat, potong2 (boleh juga buang tulang). Boiling water, add chicken and other ingredients. Saute garlic and ginger until fragrant and add into the soup. If chicken tender, cut and throw away the bone or not.
2. Sup kaldu ayam/chicken broth for soup:
Kaldu rebusan ayam + sawi asin, bwg daun/daun ketumbar. Chicken broth, fermented green mustard, green onion/cilantro.
3. Cara masak nasi/how to cook hainam rice:
tumis bwg merah dan bwg putih, serta jahe parut dgn minyak wijen dan masukkan ke dlm campuran membuat nasi hainam masak dgn rice cooker. Saute garlic and shallot, grated ginger too with sesame oil, and mix with rice and other ingredients. And cook with rice cooker.
4. Penyajian/how to serve:Sajikan panas bersama nasi hainan, sauce dan sup kaldu dan garnish. Serve hot with hainam rice, sauce and broth with garnish

Note:
Bisa juga disajikan dgn telur kecap. Can be serve with sweet egg

Wortel, bwg bombay dan daun bawang hanya berfungsi spy kaldu yg dihasilkan makin nikmat, jd tdk utk di konsum. Carrot, onion dan green onion just for make the broth more tasty, not for consume.
