Soto ayam dari Solo, Jawa Tengah ini biasa disajikan dlm mangkuk gerabah. Mempunyai citarasa khas yg ringan tapi enak. Ada yg memakai merk Soto Gerabah. This Chicken Soto from Solo, Middle Java, mostly served on clay bowl…..this soup has light taste but yummy…..TRY THIS !!!!!

SOTO REMPAH SOLO

Bahan/ingredients:

½ ekor ayam kampung besar, bagi 2. ½ pcs farmer chicken big size, cut on 2
2500 ml air. 2500 ml water.
200 gr toge, rendam air panas 2 menit, saring. 200 gr beansprout, soak with hot qater for 2 minutes, strain.
100 gr soun, rendam. 100 gr glass noodle, soak.
2 lbr daun salam. 2 pcs bay leaves.
6 lbr daun jeruk. 6 pcs lime leaves.
1 btg sereh, keprak. 1 stalk lemongrass, crust.
2 cm lengkuas keprak. 2 cm galangal, crust.

Bumbu halus/ground spices:
10 siung bwg putih. 10 cloves garlic.
6 buah bwg merah. 6 pcs shallot.
2 cm kencur. 2 cm fragrant ginger.
2 cm jahe. 2 cm ginger.
4 cm kunyit, bakar. 4 cm turmeric, roasted.
½ sdm ketumbar bubuk. ½ tbsp powdered coriander.
½ sdt jintan. ½ sdt caraway.
½ buah pala. ½ pcs nutmeg.
1 sdt lada butir hitam. 1 tsp corn black pepper.
3 buah adas, ambil bijinya saja. 3 pcs fennel, take out and use the seed.
3 buah kapulaga, ambil bijinya saja. 3 pcs cardamom, take out and use the seed
3 sdt garam (sesuaikan) 3 tsp salt (to taste)
3 sdm minyak sayur. 3 tbsp veggie oil.

Pelengkap/complimentary:
Krupuk. Cracker.
Sambal.
Jeruk nipis. Lime.
Bwg merah goreng. Fried shallot.
Bwg putih goreng. Fried garlic.
Daun bawang iris. Sliced green onion.

Cara/methods:
1.. Didihkan air bersama lengkuas, daun salam, daun jeruk dan sereh. Masukkan ayam. Boiling water with galangal, bay leaves, lime leaves and lemongrass. Add chicken.
2. Haluskan semua bumbu dan tumis hingga harum, masukkan ke dlm rebusan ayam. Ground all spices and saute until fragrant, add into chicken soup.
3. Penyajian/how to served: taruh nasi dlm mangkuk gerabah, masukkan toge, suwiran ayam, soun, siram kuah soto, taburi bwg goreng dan bwg daun dan sajikan dgn pelengkap lainnya. Put rice on a clay bowl, add beansprout, shrended chicken, glass noodle, pour hot soup soto, sprinkle with fried shallot & garlic, green onion and served with other complimentary.
