CUMI HITAM – SQUID in INK

Bahan/ingredients:
500 gr cumi sero, buang tulang muda, cuci dan potong 3 bagian. 500 gr sero squid, take out the bone, wash and cut on 3.
5 buah cabe rawit, iris. 5 pcs chilipadi, slice
4 buah bwg merah, iris. 4 pcs shallot. Slice.
2 siung bwg putih, iris. 2 cloves garlic, slice.
1 buah sereh, keprak. 1 stalk lemongrass, crust.
1 cm lengkuas, keprak. 1 cm galangal, crust.
5 lbr daun jeruk. 5 pcs lime leaves
Lada dan garam secukupnya. Some pepper and salt.
2 sdm Air lemon. 2 tbsp Lemon juice

Cara/methods:
1. Lumuri cumi dgn air lemon, diamkan selama 15 menit. Marinate squid with lemon juice, lets stand for 15 minutes.
2. Tumis lengkuas, daun jeruk, bwg merah dan putih hingga harum, masukkan cabe rawit dan cumi, aduk rata hingga cumi terlihat menyusut, beri lada dan garam. Saute galangal, lime leaves, shallot and garlic until fragrant, add chilipadi and squid, stir well, add. Some pepper and salt.
3. Aduk rata, angkat dan pindahkan ke dlm piring saji. Stir well, lift up and put on servibg dish.

Note:
Jangan terlalu lama memasak cumi, krn cumi akan mengeras (5-7 menit saja memasaknya). Don’t cook for to long, because squid will be rubbery (cook 5-7 minutes).
