Lo Ak ala Tio Chiu -Tio Chiu Poached Duck

Masakan ini berasal dr Tio Chiu, China. Lo artinya sup dan Ak artinya bebek. Cara memasaknya di rebus hingga bebek empuk. Sangat nikmat.
This is the Tio Chiu dish. China. Lo means soup and Ak means the duck. Poach until the duck tender. Very delicios.

LO AK ala TIO CHIU – TIO CHIU POACHED DUCK

Bahan/ingredients:
1 ekor bebek, cuci dan buang isi perut. 1 pcs duck, wash, throw out guts.

Bumbu/Seasoning:
3 sdm gula. 3 tbsp sugar.
20 buah pekak/bunga lawang. 20 pcs star anis.
2 sdm kecap jamur. 2 tbsp mushroom soy sauce.
2 sdm kecap asin. 2 tbsp soy sauce.
100 gr lengkuas, iris, 100 gr galangal, slice.
4 cm jahe, iris. 4 cm ginger, slice.
1 sdt lada. 1 tsp pepper.
Air secukupnya. Some water.

Pelengkap/complimentary:
Bwg swana/daun bwg putih, cincang + cuka + air. Garlic leaves, chopped + vinegar + water. (I use Shu/japanese vinegar)
Daun ketumbar. Cilantro.
Kuah rebusan bebek. Duck soup.

Cara/methods:
1. Panaskan penggorengan, masukkan gula, aduk hingga berkaramel, masukkan air dan bumbu lain. Heat wok, add sugar, stir until caramelized, add water and seasoning.
2. Air sdh mendidih, masukkan bebek, rebus hingga empuk. Water boiling already, add the duck and poached until tender.
3. Potong bebek, sajikan bersama nasi dan pendamping. Cut the duck, served with rice and complimentary.l
