Mie Kangkung – Water Kale Noodle

MIE KANGKUNG – WATER KALE NOODLE

Bahan/ingredients:
500 gr ayam, potong dadu. 500 gr chicken cut on dice.
250 gr udang, tanpa kulit. 250 gr shrimp skinless.
100 gr juhi, potong kecil2 (sesuai selera). 100 gr dry squid, cut small (optional)
3000 ml air. 3000 ml water.

Bumbu/spices:
1 sdm ebi kering bubuk, sangrai. 1 tbsp powdered dry shrimp, roasted
10 butir bawang merah. 10 pcs shallot.
8 siung bawang putih. 8 cloves garlic.
Garam secukupnya. Some salt (to taste)
1 sdt lada bubuk. 1 tsp powdered pepper.
2 sdm minyak wijen. 2 tbsp sesame oil.
2 sdm arak masak xao xing. 2 tbsp wine xao xing.
4 sdm kecap ikan. 4 tbsp fish sauce.
4-5 sdm kecap manis.4-5 tbsp dark sweet soy sauce.
2 sdm kecap jamur. 2 tbsp mushroom soy sauce.
4 sdm saus tiram. 4 tbsp oyster sauce.
2 sdm maizena + 2 sdm air utk pengental. 2 tbsp corn strach + 2 tbsp water for thickener.

Pelengkap/complimentary:
Mie rebus dma tiriskan. Boiling noodle and strain.
Kangkung, ambil daunnya, cuci dan tiriskan. Take out water kale leaves, wash and strain.
Kucai, potong 2 cm. Chives, cut 2 cm
Toge rendam air panas 1 menit. Soak beansprout for 1 minute.
Bwg merah goreng. Fried shallot.
Jeruk nipis. Lime
Sambal bwg putih. Sambal garlic

Cara/method:
1. Haluskan dan tumis bwg merah dan bwg putih hingga harum, masukkan ayam aduk hingga berubah warna, masukkan udang dan juhi. Aduk hingga udang berubah warna, masukkan arak masak, aduk, masukkan bumbu yg lain, aduk.
2. Masukkan air dan biarkan mendidih dan kentalkan dgn larutan maizena. Add water, leta boiling. Add corn strach mixture, stir well.
3. Penyajian/how to served:
Taruh mie dlm mangkuk, beri kangkung, t, siram dgn sup dan isinya, taruh toge dan kucai. Taburi bwg goreng. Dan sajikan panas dgn sambal dan jeruk nipis. Put noodle on bowl, add water kale, pour soup and filling, add beansprout and chives, sprinkle with fried shallot. And served with sambal and lime.
