BLUEBERRY BUCKLE

Bahan/ingredients:

90 gr gula halus. 90 gr castor sugar.
80 gr mentega tawar (suhu ruang). 80 gr unsalted butter (room temperature). (wijsman)
1 btr telur. 1 pcs egg
50 gr susu segar. 50 gr fresh milk.
50 gr whipping cream.
110 gr tepung bebas gluten/tepung utk cake. 110 gr gluten free flour/cake flour (kunci biru)
90 gr tepung almond. 90 gr powdered almond.
1 sdt baking soda (baking soda bisa diganti dgn 2 sdt baking powder). 1 tsp baking soda (baking soda can be change with 2 tsp baking powder)
1/2 sdt garam. ½ tsp salt
200 gr blueberry segar. 200 gr fresh blueberries.
1 sdt vanilla extract. 1 tsp vanilla extract.

Taburan streusel/Streusel Topping :
50 gr gula merah butir. 50 gr granulated brown sugar
20 gr tepung gluten free/tepung utk cake.20 gr gliluten free flour/cake flour.
½ sdt bubuk kayu manis. ½ tsp powdered cinnamon.
20 gr mentega tawar.(suhu ruangan). 20 gr unsalted butter (room temperature)

Cara/methods:
1. Panaskan oven 190C. Oles loyang loaf 20x10cm dgn mentega or minyak sayur. Alasi kertas roti. Prehead oven 190C. Spread loaf pan 20×10 cm with butter or veggie oil. Cover with baking sheet.
2. Campur gula, mentega dan telur. Mixer dengan speed medium sampai adonan merata (3 menit) mix sugar, butter and egg, mixer with medium speed until mixture mixwell. (3 minutes).
3. Campur bahan kering (tepung, tepung almond baking soda dan garam) bertahap, mixer kecepatan rendah (2 minutes). Mix dry ingredients (flour, powdered almond, baking soda and salt) step by step, mixer with slow speed. (2 minutes)
4. Tambahan susu segar dan whipping cream, bertahap. Mixer kecepatan rendah sampai merata. Add fresh milk and whipping cream step by step, mixer with slow speed until mix well.
5. Masukan vanilla extracts. Add vanilla extract, mix well.
6. Masukan blueberries aduk dgn spatula. Add fresh blueberries stir well with spatula.
7. Tuang ke loyang loaf. Pour the mixture on loaf pan.
8. Cara membuat Streusle/how to make streusle topping:
Campurkan gula merah, tepung, bubuk kayu manis, dan mentega. Campuran akan menggumpal kecil-kecil. Taburkan diatas adonan sampai merata. Mix brown sugar, flour, powdered cinnamon and butter
9. Taburkan dgn Streusle diatas adonan. Sprinkle streusle topping on mixture.
9. Oven selama 30 minute. Agak dingin keluarkan dr loyang potong. Bake for 30 minutes, after cold, lift up cake from the pan and slice.
