Siomay Ayam & Ikan – Chicken & fish Shiumay

SIOMAY AYAM & IKAN – CHICKEN & FISH SHIUMAY

Bahan/ingredients:
1 pak kulit gyoza (isi 16 lbr). 1 pack gyoza skin (16 pcs)
1 buah tahu putih. 1 pcs white tofu.
300 gr daging dada ayam. 300gr chicken breast.
100 gr daging ayam, cincang kasar dan sisihkan. 100 gr chicken, roughly chop and set aside.
200 gr ikan tenggiri. 200 gr mackerel.
4 siung bwg putih. 4 cloves garlic.
1 butir telur. 1 pcs egg.
2 sdm maizena. 2 tbsp corn strach.
¼ btg wortel, parut utk ditabur diatas siomay. ¼ stalk carrot, grated for shiumay topping.

Bumbu/seasoning:
1 sdm kecap asin. 1 tbsp soy sauce.
½ sdm kecap ikan. ½ tbsp fish sauce.
1 sdm kecap raja rasa. 1 tbsp raja rasa soy sauce.
1 sdm sauce tiram. 1 tbsp oyter sauce.
2 sdt minyak wijen. 2 tsp sesame oil.
½ sdt lada bubuk. ½ tsp powdered pepper.
1 sdt ngohiong bubuk. 1 tsp powdered five star.

Saus sambal/sambal sauce:
2 buah tomat segar, proses dgn slow juicer. 2 pcs frsh tomatoes, process using slow juicer.
2 sdm juice buah beet. 2 tbsp beet root juice.
20 gr bwg bombay cincang. 20 gr chopped onion.
2 siung bwg putih, cincang. 2 cloves chopped garlic.
2 sdt sambal rawit. 2 tsp sambal chilipadi.
Garam, gula dan lada secukupnya. Some salt, sugar and pepper.
Larutan maizena utk pengental. Corn strach batter for thickener.

Cara/methods:
1. Hancurkan daging ayam, ikan dan bwg putih dgn food procesor (jgn terlalu halus). Ground chicken , fish and garlic with food processor (do not too fine).
2. Campur daging halus dgn ayam cincang. Tambahkan maizena, telur dan bumbu, aduk rata. Combine ground chicken with rough chicken. Add corn strach egg and seasoning.
3. Ambil adonan dan letakkan pada kulit gyoza, rekatkan sisa kulit pada adonan daging dgn rapi. Letakkan diatasnya parutan wortel. Take the dough and place it on the skin of gyoza, gyoza skin glue on the edges of the dough meat cleanly. Put on top of grated carrots.

4. Letakkan sisa adonan diatas tahu yg dan beri wortel parut. Place the remaining dough over and put on top grated carrot.
5. Panaskan kukusan. Dan letakkan siomay dan tahu dlm kukusan, kukus selama 15 menit. Preheat steamer. Put shiumay and tofu on steamer, steam for 15 minutes.
6. Masak saus sambal hingga menyusut dan kentalkan, sisihkan. Cook sambal sauce until reduce and thickener, set aside.
7. Sajikan siomay dan tahu dgn saus sambal selagi panas. Served hot shiumay and stuffed tofu with sambal saus.

Note:
Resep ini jadi 16 siomay dan 6 tahu isi. This recipe could produce 16 shiumay dan 6 stuffed tofu.
