BAKWAN SURABAYA – SURABAYA’S MEATBALL

Bahan/ingredients:
100 gr soun baso, rendam air panas, tiriskan bila sdh lembek (textur besar dan keras). 100 gr glass noodle, soak with hot water, strain when it is flaccid. (texture thick and hard)
8 lbr kol, rebus dan tiriskan, utk membuat kol isi. 8 pcs cabagge, boiling and strain, for make stuffed cabagge.
3000 ml air. 3000 ml water.
500 gr tulang sumsum sapi. 500 gr beef marrow.
2 cm jahe, keprak. 2 cm ginger, crust.
20 butir baso sapi (aku beli). 20 pcs meetball. (I bought it)
18 lbr kulit pangsit, utk membuat siomay kukus dan siomay gulung goreng. 18 pcs wonton skin, for make steam shiumay and stuffed cabagge.

Pelengkap/complimentary:
1 btg bwg daun, iris halus. 1 stalk green onion finely slice.
Bwg merah goreng. Fried shallot.
Sambal. Sambal.
Jeruk nipis. Lime.
Kecap manis. Dark sweet soy sauce.

Bumbu utk sup/seasoning for sup:
5 siung bwg putih. 5 pcs garlic.
2 buah bwg merah. 2 pcs shallot.
Lada dan garam secukupnya. Some pepper and salt.
1/4 buah pala. 1/4 pcs nutmeg.

Cara/method:
1. Rebus air, masukkan tulang sumsum dan jahe. Boiling water, add beef marrow and ginger.
2. Haluskan bumbu utk sup dan tumis hingga harum, masukkan ke dalam air rebusan, rebus dgn api kecil. Ground seasoning for soup and saute the seasoning, add into boiling water, boil with simmer.
3. Setelah membuat adonan siomay, ambil adonan sebagian utk dibungkus kol dan kukus selama 15 menit. When shiumay mixture done, take some shiumay batter, wrapped with cabagge and steam for 15 minutes.
4. Ambil sebagian adonan siomay, buat siomay dna kukus selama 15 menit. Take some shiumay batter and make shiumay and steam for 15 minutes.
5. Ambil lagi sebagian utk membuat shiomay gulung dan gorneg hingga coklat keemasan. Take some more of shiumay batter and make shiumay rool, fried until golden brown.
6. Buat bulatan pada sisa adonan menjadi baso goreng dan goreng hingga kecoklatan. Create a circle on the remaining dough into a fried meatballs and fry until browned.
7. Cara menyajikan/how to served:
Letakkan soun, siomay, baso dan kol isi dlm mangkuk, siram dgn kuah panas, taburi bwg daun dan bwg goreng, sajikan bersama gorengan dan pelengkap lainnya. Put on a bowl glass noodle. shiumay, meetball and stuffed cabagge. Pour with hot soup, and served with fried shiomay rool, fried shiomay ball and other complimentary.
