AYAM TALIWANG LOMBOK – LOMBOK’S CHICKEN TALIWANG.

Bahan/ingredients:
2 ekor ayam kampung ukuran kecil. 2 pcs farmer chicken small size.
1 buah jeruk nipis. 1 pcs lime.
6 lbr daun jeruk. 6 pcs lime leaves.
500 ml santan dr 1 buah kelapa. 500 ml coconut milk from 1 pcs coconut.

Bumbu/spices:
15 buah bwg merah. 15 pcs shallot
10 siung bwg putih. 10 cloves garlic.
6 buah kemiri. 6 pcs candle nuts.
15 buah cabe merah besar. 15 pcs red chilies.
10 buah cabe rawit. 10 pcs chilipadi.
2 sdt terasi. 2 tsp shrimp paste.
1 sdm gula merah. 1 tbsp brown sugar.
4 sdm air asam jawa. 4 tbsp java tamarin water.
Garam secukupnya. Some salt.
6 sdm minyak kelapa. 6 tbsp coconut oil.

Cara/method:
1. Haluskan bumbu. Panaskan minyak kelapa, masukkan daun jeruk dan bumbu halus tumis hingga harum dan berubah warna menjadi merah gelap, masukkan santan, aduk rata dan biarkan mendidih. Ground spices, heat coconut oil, add lime leaves and ground spices, saute until fragrant and the spices changing into dark red, add coconut milk, stir and lets boiling.
2. Masukkan ayam, masak dgn api kecil hingga air menyusut dan ayam empuk. Add chicken, simmer until the water reduced and chicken tender.
3. Panggang ayam dan oles dgn sisa bumbu. Grill chicken and glaze with remaining spices.
4. Sajikan dgn sisa bumbu. Served with remaining spices.
5. Umumnya disajikan dgn plecing kangkung. Mostly served with plecing kangkung (Lombok’s authentic salad)
