MIE KOCOK BANDUNG – BANDUNG’S MIE KOCOK

Baham/ingredients:
500 gr mie kering, rebus dan tiriskan. 500 gr dry noodle, boiling and strain.
Tulang kaki sapi. Beef bone leg.
300 gr babat sapi (boleh tdk pakai). 300 gr beef tripe. (optional)
500 gr kikil kulit sapi (aku ga pakai krn ga dpt, ini bahan utama). 500 gr beef skin. (main ingredients, but I’m not find this).
3000 ml air. 3000 ml water.
1 buah lobak putih, potong kotak. 1 pcs white radish, cut chuck.
2 cm jahe, keprak. 2 cm ginger crust.

Bumbu/spices:
2 buah kemiri. 2 candle nuts.
6 siung bawang putih. 6 cloves garlic.
Lada, pala dan garam secukupnya. Some pepper, nutmeg and salt.
1 sdm ebi kering, rendam air panas dan sangrai. 1 tbsp dry shrimp. Soak hot water, roasted.

Pelengkap/complimentary:
Seledri, iris. Celery, slice.
Kucai, potong ½ cm. Chives, cut ½ cm.
Bawang merah goreng. Fried shallot.
Toge. Beansprout.
1 btg bwg daun, iris tipis. 1 stalk green onion, slice.
Tongchai. Fermented radish.
Sambal. Sambal
Kecap manis. Dark sweet soy sauce.
Cuka/jeruk nipis. Vinegar or lime.

Cara/method:
1. Didihkan air, masukkan tulang, kikil kulit dan babat. Boiling water, add bone, beef skin and beef tripe.
2. Haluskan dan tumis bumbu hingga harum, masukkan dlm soup, rebus dgn api kecil hingga babat dan kikil kulit empuk, angkat dan potong kotak. Sisihkan. Masukkan lobak. Ground and saute spices until fragrant, add into soup, simmer until beef tripe and beef skin tender, lift up and chuck. Set aside. Add radish.
3. Cara saji/how to served:
Sajikan dlm mangkuk mie, babat, kikil sapi, dan siram dgn soup, beri pelengkap dan sajikan bersama sambal. Served on bowl, noodle, beef tripe, beef skin and pour with hot soup, add complimentary. Served with sambal.
