Plecing Kangkung semacam salad khas berasal dr pulau Lombok dgn bahan dasar kangkung dan sambal tomat yg khas dan bertabur kacang tanah. Plecing Kangkung is authentic salad from Lombok island,with base ingredients are water kale and authentic sambal tomato and peanut on top.

PLECING KANGKUNG LOMBOK – LOMBOK’S PLECING KANGKUNG

Bahan/ingredients:
1 ikat kangkung air, petik daunnya saja, cuci dan tiriskan. A bundle of water kale, just take the leaves, wash and strain.
1 sdt garam. 1 tsp salt.
500ml air. 500 ml water.

Bumbu/spices:
2 buah cabe merah. 2 pcs red chili.
3 buah cabe rawit (sesuaikan). 3 pcs chilipadi (optional).
1 cm kencur. 1 cm fragrant ginger.
1 buah tomat segar, 1 pcs fresh tomato.
3 buah bawang merah, 3 pcs shallot.
2 buah bwg putih.
½ sdt terasi. ½ tsp shrimp paste
Garam secukupnya. Some salt.

Taburan/toppimg:
Kacang tanah goreng. Fried peanut.

Cara/method:
1. Didihkan air, masukkan garam, masukkan batang kangkung 1 menit, siramkan air rebus pada daun kangkung diamkan 30 detik, angkat dan rendam dlm air dingin. Diamkan 1 menit tiriskan. Boiling water, add salt and water kale stem for 30 seconds, pour hot water on water kale leaves, let stand for 30 seconds, lift up and soak on cold water, for 1 minute and strain.
2. Haluskan bumbu dan tumis. Ground spices and saute.
3. Letakkan kangkung pd piring saji dan siram dgn bumbu, taburi kacang. Put water kale on dish pour the spices and put peanut on top.
