Soto Ayam Banjar adalah soto khas dr Banjarmasin, Kalimantan Selatan, supnya bening tp kaya rempah. Banjar’s Chicken Soup is originated from Banjarmasin, South Borneo, clear soup but rich in spices.

SOTO AYAM BANJAR – BANJAR’S CHICKEN SOUP

Bahan/ingredients:
1 ekor ayam kampung ukuran sedang, bagi 4. 1 pcs farmer chicken medium size, cut 4 part.
1½ sdm garam. 1½ tbsp salt.
2 btg daun bawang, iris halus. 2 stalks green onion, finely slice.
3000 ml air. 3000 ml water.

Bumbu utuh/whole spices:
3 lbr daun salam. 3 pcs bay leaves.
5 lbr daun jeruk. 5 pcs lime leaves.
2 cm jahe, keprak. 2 cm ginger, crust.
5 buah kapulaga. 5 pcs cardamon.
6 buah adas. 6 pcs fennel.
5 pcs bunga cengkeh. 5 pcs cloves.
3 cm kayu manis. 3 cm cinnamon.

Bumbu halus/ground spices:
20 buah bwg merah. 20 pcs shallot.
10 siung bwg putih. 10 cloves garlic.
½ buah pala. ½ pcs nutmeg.
1 sdt lada putih butir. 1 tsp white peppercorn.
3-4 sdm minyak sayur. 3-4 tbsp veggie oil.

Pelengkap/complimentary:
Lontong/nasi. Rice cake/rice.

Bawang daun, iris. Green pnion, slice.
Seledri, iris. Celery, slice.
Bwg putih goreng. Fried garlic.
Sambal. Sambal
Jeruk nipis. Lime.
Telur rebus. Boiling egg.
Soun. Glass noodle.
Krupuk. Crackers.

Cara/method:
1. Didihkan air, masukkan ayam.
2. Masukkan bumbu utuh ke dlm kantung bumbu dan masukkan dlm sup. Add whole spices into spices bag, and add into the soup.
3. Goreng ½ matang bwg merah dan putih, haluskan bersama pala dan lada. Tumis dgn bwg daun iris hingga harum dan masukkan ke dlm sup. ½ fried shallot and garlic, ground with nutmeg and peppercorn. Saute with slices green onion until fragrant and add into the soup.
4. Rebus ayam hingga empuk, masukkan garam, angkat dan suwir2. Boil until chicken tender, add salt, lift up and shredded.
5. Cara penyajian soto banjar/how to serve Banjar’s soup:
Letakkan dlm mangkuk lontong/nasi, letakkan diatasnya soun, daging suwir, telur rebus. Siram dgn sup panas, taburi bwg daun, seledri dan bwg putih goreng. Sajikan dgn sambal, jeruk nipis dan krupuk. Place rice cake/rice on a bowl, add on top glass noodle, shredded chicken, boiling egg. Pour with hot soup, topping with green onion, celery, and fried garlic. Served with sambal, lime and crackers.
