SALAD KUPING BABI – PIG EARS SALAD

Bahan/ingredients:
2 potong kuping babi, bersihkan bulunya. 2 pcs pig ears, pluck the fur.
1500 ml air. 1500 ml water.
Sayur selada campur. Assorted salad.

Bumbu/seasoning:
2 sdm kecap jamur. 2 tbsp mushroom soy.
2 sdm kecap manis. 2 tbsp dark sweet soy sauce. (black gold)
½ sdt lada bubuk. ½ tsp powdered pepper.
6 buah bunga lawang. 6 pcs star anis.
1 sdt ngohiong bubuk. 1 tsp five spices.
3 siung bwng putih. 3 cloves garlic.

Saus/dressing:
1 sdm minyak sayur. 1 tbsp veggie oil.
½ sdm minyak wijen. ½ tbsp sesame oil.
½ sdm kecap asin. ½ tbsp soy sauce.
2 siung bwg putih cincang. 2 cloves chopped garlic.
Biji wijen putih. Sesame seed.

Cara/method:
1. Didihkan air, masukkan kuping babi dan bumbu, rebus hingga empuk. Boiling water, add pig ears and seasoning until tender.
2. Angkat kuping babi dan iris2, sisihkan. Lift up pig ears and slice, set aside.
3. Panaskan minyak sayur dan minyak wijen, masukkan bwg putih cincang, tumis hingga kuning, masukkan kecap asin, aduk dan campur dgn irisan kuping. Heat veggie oil and sesame oil, add chopped garlic, saute until golden, add soy sauce, stir and mix with slices pig ears.
4. Tata sayur selada campur diatas piring saji, letakkan salad kuping babi, taburi biji wijen dan sajikan. Place assorted salad on serving dish, put pig ears salad, sprinkle with sesame seed on top and ready to serve.
