AYAM OVEN BUMBU KUNING -BAKED CHICKEN YELLOW SPICE

Bahan/ingredients:
1 ekor ayam kampung ukuran sedang, belah 4 dan bersihkan. 1 pcs farmer chicken medium size, cut on 4 and wash.
Air kelapa dr 2 buah kelapa. Coconut water from 2 coconut.
3 btg sereh, keprak. 3 stalks lemongrass, crust.
2 cm lengkuas, keprak. 2 cm galangal, crust.
2 cm jahe, keprak. 2 cm ginger, crust
10 lbr daun jeruk. 10 pcs lime leaves.
2 lbr daun salam. 2 pcs bayleave.

Bumbu/spices:
8 buah bwng merah. 8 pcs shallot.
6 siung bwng putih. 6 cloves garlic.
1 sdm ketumbar bubuk. 1 tbsp powdered coriander.
5 buah kemiri sangrai. 5 pcs candle nut, roasted.
2 cm kencur. 2 cm fragrant ginger.
3 cm kunyit, bakar dan kupas. 3 cm turmeric, roasted and pell off.
Garam secukupnya.

Cara/method:
1. Rebus air kelapa bersama jahe, lengkuas, daun jeruk, daun salam dan sereh. Masukkan ayam. Boiling coconut water with ginger. Galangal, lime leaves, bayleave and lemongrass. Add chicken.
2. Goreng ½ matang bwng merah, bwng putih, kencur. Campur dan haluskan dgn bumbu lain kecuali gara. Tumis hingga harum, masukkan ke dlm rebusan ayam. Half fried shallot, garlic, fragrant ginger. Mix and ground with other spices accept salt. Saute until fragrant, add into boiling chicken.
3. Rebus ayam hingga empuk 75%, masukkan garam, rebus hingga empuk. Angkat ayam dan tiriskan. Boiling chicken until tender. Lift up chicken and strain.
4. Proses dgn airfryer suhu 200C ke dua sisinya (dpt juga lgsg dgn digoreng) Using airfryer for process two side with temperature 200C.(or process with deepfry).
5. Sajikan dgn lalapan dan sambal pilihan. Serve with salad and sambal your choice.
