Ayam Pop Padang – Padang’s Chicken Pop

AYAM POP PADANG – PADANG’S CHICKEN POP

Bahan/ingredients:
1 ekor ayam kampung tanpa kulit dan bagi 4. 1 pcs farmer chicken, skinless and cut on 4 part
2 lbr daun salam. 2 pcs bayleaf
4 lbr daun jeruk. 4 pcs lime leaf
2 cm jahe, keprek. 2 cm ginger, crust.
1 btg sereh, keprak. 1 stalk lemongrass, crust.
2 cm lengkuas, keprek. 2 cm galangal, crust.
Minyak goreng (utk menggoreng bila suka). Oil for deep fry.
2 buah kelapa ambil airnya saja. 2 pcs coconut just use coconut water.

Bumbu halus/ground spices:
6 buah bwng merah. 6 pcs shallot.
4 siung bwng putih. 4 cloves garlic.
3 buah kemiri. 3 pcs candle nut.
1 sdt garam. 1 tsp salt.
1/4 sdt lada putih bubuk. ¼ tsp powdered white pepper.

Bahan sambal merah/red sambal ingredients:
4 buah cabe merah besar, buang biji. 4 pcs red chili, seedless
3 buah cabe rawit (sesuaikan). 3 pcs chilipadi. (adjustable)
1 siung bwng putih. 1 cloves garlic.
1 buah bwng merah. 1 pcs shallot.
Garam dan gula secukupnya. Some salt and sugar.
50 ml air. 50 ml water.
Cuka secukupnya (aku pakai jeruk nipis). Some vinegar (I used lime juice)
2 sdm minyak sayur utk menumis. 2 tbsp veggie oil for saute.

Bahan sambal cabe hijau/green sambal ingredients:
5 buah cabe hijau besar. 5 pcs green chili.
10 buah cabe rawit hijau. 10 pcs green chilipadi.
4 buah tomat hijau, potong kasar. 4 pcs green tomatoes, cut.
4 buah bwng merah, cincang. 4 pcs shallot, chop.
2 siung bwng putih, cincang. 2 cloves garlic, chop.
3 lbr daun jeruk. 3 pcs lime leaves.
4 sdm minyak sayur utk menumis. 4 tbsp veggie oil for saute.

Cara/method:
1. Cuci bersih ayam, tiriskan dan lumuri dgn bumbu halus, diamkan di kulkas minimal 1 jam. Wash chicken, strain and marinate with ground spices, refrigerate minimal 1 hour.
2. Didihkan air kelapa ditambah bahan yg lain, masukkan ayam, rebus smp ayam empuk dgn api kecil, disajikan tanpa airnya. Boiling coconut water and add other ingredients, add chicken, simmer until chiken tender. Served with out the soup.
3. Bila ingin digoreng, panaskan minyak, celupkan ayam 1 menit, angkat dan tiriskan. If you want the fried ones, heat oil, add chicken just 1 minutes, lift up chicken and strain.
4. Membuat sambal merah/how to cook red sambal: Blender semua bahan sambal merah, dan tumis hingga berubah warna. Blender all red sambal ingredients, saute until changing color.
5. Membuat sambel ijo/how to cook green sambal: Panaskan minyak, masukkan semua bahan sambal hijau dan tumis hingga cabe 40% lembek, hancurkan kasar dgn ulekan. Heat oil, add all green sbal ingredients and saute until 40% chilli tender, crushed with a pestle.
6. Sajikan bersama sambal merah dan sambal hijau. Served with red sambal and green sambal
