GULAI KEPALA IKAN – FISH HEAD CURRY

Bahan/ingredients:
800 gr kepala ikan kakap merah. 800 gr red snaper head.
2 buah Jeruk Nipis. 2 pcs lime.
Garam secukupnya. Some salt.
750 ml santan encer dr 1 buah kelapa. 570 ml light coconut milk from 1 pcs coconut.
250ml santan kental dr 1 buah kelapa. 250ml heavy coconut milk from 1 pcs coconut.

Bumbu utuh/whole spices:
1 lbr daun kunyit. 1 pcs turmeric leaf
3 lbr daun salam. 3 pcs bayleaf.
10 lbr daun jeruk.
4 cm lengkuas, keprak. 4 cm galangal, crust
15 gr asam gelugur. 15 gr gelugur acid
4 buah asam arsik, keluarkan bijinya. 4 pcs arsik acid, take out the seed.
3 btg sereh, keprak. 3 stalks lemongrass, crust

Bumbu halus/ground spices:
2 sdm cabe merah halus. 2 tbsp ground red chili.
50 gr bwng merah. 50 gr shallot.
30 gr bwng putih. 30 gr garlic.
4 cm jahe. 4 cm ginger.
4 cm kunyit bakar, kupas. 4 cm grilled turmeric, peel.
1 sdt ketumbar bubuk. 1 tsp powdered coriander.
2 buah kemiri sangrai. 2 pcs roasted candle nut.
½ sdm garam. ½ tbsp salt.
2 sdt gula merah. 2 tsp brown sugar
3 sdm minyak sayur. 3 tbsp veggie oil.

Cara/Methods:
1. Lumuri kepala ikan dgn jeruk nipis dan garam. Diamkan 10 menit. Marinate fish head with lime juice and some salt. Lets stand for 10 minutes.
2. Goreng ½ matang bwg merah, bwg putih dan jahe. Campur dan haluskan bersama kemiri, biji asam arsik, ketumbar, kunyit, gula merah, garam dan cabe halus.half fried shallot garlic and ginger. Mix and ground with candle nut, arsik acid seed, coriander, turmeric, brown sugar salt and ground red chili.
3. Panaskan minyak, tumis bumbu halus hingga harum, masukkan sereh, daun salam, daun jeruk, daun kunyit dan asam kandis. Tumis hingga berubah warna, masukkan ½ bagian santan encer, aduk rata. Heat oil, saute ground spices until fragrant, add lemongrass, bayleaf, lime leaves, turmeric leaf, and kandis acid. Saute until changing color, add half part of light coconut milk, stir well.
4. Masukkan kepala ikan, tuang sisa santan encer dan santan kental, aduk perlahan. Masak 15 menit. Add fish head, pour the remaining light coconut milk and heavy coconut, gently stir.
5. Siap disajikan panas. Ready to serve hot.

Note:
Memasak ikan jgn sering diaduk krn akan hancur ikannya.
Do not stir too much as it can damage the fish meat.
Asam arsik bisa diganti air asam jawa (aroma mmg beda). Arsik acid can be change with java tamarin water (different fragrant)
