TUMIS ONCOM & LEUNCA – SAUTE FERMENTED SOY BEAN & LEUNCA

Bahan/ingredients:
250 gr oncom, remas. 250 gr fermented soy bean, squeeze.
60 gr leunca.
30 gr kemangi. 30 gr thai basil.
¼ buah bawang bombay, iris. ¼ pcs onion, slice.
4 buah bwng merah, iris. 4 pcs shallot, slice.
3 siung bwng putih, iris. 3 pcs garlic slice.
2 buah cabe hijau, iris serong. 2 pcs green chili, oblique.
6 buah cabe rawit merah. 6 pcs red chilipadi.
2 cm lengkuas, keprak. 2 cm galangal, crust.
5 lbr daun jeruk. 5 pcs lime leaves.
Garam, lada dan gula secukupnya. Some Salt, pepper and sugar.
40 ml air panas. 40 ml hot water.
2 sdm minyak sayur. 2 tbsp veggie oil.

Cara/methods:

1. Panaskan minyak sayur, masukkan bwng merah, bwng putih bwg bombay, lengkuas dan daun jeruk, tumis hingga harum. Heat veggie oil, add shallot, garlic, onion, galangal and lime leaves, saute until fragrants.
2. Masukkan leunca, oncom, air panas, garam, lada dan gula, aduk rata selama 5 menit. Add leunca, fermented soy bean, hot water, salt, pepper and sugar, stir well for 5 minutes.
3. Masukkan kemangi, aduk 1 menit dan angkat. Add thai basil, stir for 1 minutes and lift up.
