Sop Tomat – Roti Mustard Bawang Putih

SUP TOMAT -TOMATO SOUP

Bahan/ingredients:
1/2 ekor ayam asap. A half smoke chicken.
6 btg sosis (Benardi or merk lain, aku pakai sosis german special dr bali homemade). 6 pcs sausage (Benardi or other brand, I use germany sausage from Bali)
1/2 kaleng kacang polong. ½ can peas
1/2 klg jamur champinon. 1/2 can champinon mushroom
½ kaleng jagung, 1/2 can sweet corn.
1/2 klg ham “maling”, potong dadu kecil. 1/2 klg ham “Maling”, cut on smll dice.
3 wortel besar, pot dadu kecil. 3 pcs big carrots, cut on small dice.
250 gr lidah sapi asap, potong dadu kecil. 250 gr smoke cow tongue, cut on small dice.
2500gr tomat segar, kukus, gunakan slow juicer. 2500 gr fresh tomatoes, steam, proces using slow juicer (I use OPTRIMAX slow juicer)
2 btg seledri, diikat. 2 stalk celery, bundle
1 sdm butter. 1 tbs butter
2500 ml kaldu ayam. 2500 ml chicken broth.

Bumbu halus/ground spices;
8 bwg putih. 8 garlic
4 bwg merah. 4 shallot
1 buah bwg bombay. 1 pcs onion.
1 sdt lada bubuk. 1 sdt ground pepper
3 buah kapulaga, ambil bijinya saja. 3 pcs cardamom, just take the seed.
1 buah biji pala.1 pcs nutmeg.
Garam dan gula secukupnya. Some salt and sugar

Cara/method:
1. Didihkan air, bila sdh mendidih masukkan seledri, lidah asap dan ayam asap, rebus hingga matang, angkat, tiriskan, potong2. Boiling water, add celery, smoke cow tongue and smoke chicken, boiling until chicken much tender, lift, drain and cut on dice.
2. Goreng ½ matang bwg merah bwg putih dan bawang bombay, tiriskan, blender bersama garam, gula, lada, pala dan kapulaga yg sdh dihaluskan. Fried half cook shallot, garlic and onion, strain, blender with salt, sugar, ground nutmeg and cardamom.
3. Panaskan mentega, masukkan bumbu blender, tumis 10 menit (menyusut 40%), masukkan ke dlm sup. Heat butter, add blend spices, saute for 10 minutes (until reduced 40%), add in to the soup.
4. Masukkan semua bahan dan masak dgn api kecil selama 15 menit dan siap disajikan. Add all ingredients. Simmer around 15 minutes. And ready to serve.

ROTI MUSTARD BAWANG PUTIH – MUSTARD GARLIC BREAD

Bahan/ingredients:
1 buah roti batard, iris serong, sisihkan. 1 pcs batard bread, obligue.
Parsley kering. Dry parsley.
3 btg bawang daun kecil, iris halus. 3 pcs small green onion, finely slice.

Bahan oles/spread ingredient:
3 sdm mentega tawar. 3 tbsp unsalted butter. (Elle & Vire)
1½ sdt mustard. 1½ tsp mustard. (d’john)
½ sdt garam. ½ tap salt.
Lada bubuk secukupnya. Some pepper powder.
4 siung bwg putih, parut halus. 4 pcs garlic, finely grated.

Cara/Method:
1. Panaskan oven 180C. Preheat oven 180C.
2. Campur rata bahan oles dan bwg daun. Mix well spread ingredients amd green onion.
3. Oleskan pada roti dan taburi parsley kering. Spread on bread and sprinkle with dry parsley.
4. Masukkan dlm oven dan oven selama 10 menit. Add into oven and bake for 10 minutes.
5. Siap dihidangkan bersama soup tomat. Ready to served with tomato soup.
