RAWON JAWA DAGING SAPI – JAVANESE BEEF BLACK SOUP

Bahan/ingredients:
1000 gr daging sapi. 1000 gr beef
1 btg bwg daun, iris. 1 stalk green onion, slice
2500 ml air. 2500 ml water.
1 buah tomat segar belah 2, 1 pcs fresh tomato, slice on 2.

Pendamping/complimentary:

Krupuk favorit. Favorit crackers
Telor asin. Salty egg
Sambel trasi. Shrimp paste sambal.
Bawang merah goreng. Fried shallot

Bumbu halus/ground spices:
10 buah kluwek. 10 pcs Kluwak
2 btg sereh keprak. 2 stalks lemon grass, crust.
3 cm kunyit bakar. 3 cm grilled turmeric.
6 daun jeruk. 6 lime leaves
2 cm lengkuas. 2 cm galangal
3 cm jahe. 3 cm ginger
10 btr bwg merah. 10 pcs shallot
5 siung bwg putih. 5 cloves garlic
1 cabe merah besar buang biji. 1 pcs red bell pepper, seedless.2 sdt ketumbar bubuk. 2 tsp coriander powder.
1/4 sdt merica halus. 1/4 tsp ground pepper
1/4 sdt jinten bubhk. 1/4 sdt caraway powder
Garam secukupnya. Some salt to taste
1 sdm air asam jawa (asam jawa rendam air panas, saring dan ambil airnya saja). 1 tbs tamarin juice (soak java tamarin with hot water, strain and just take the juice)

Cara/methods:
1. Cuci dan potong daging kotak2. Wash and chunk beef
2. Didihkan air, mskkan daging dan buang air 1x agar lemak berkurang. Boiling water, add oxtail, and change the water 1 times, to reduce the amount of fat.
3. Haluskan bumbu kecuali sere dan daun jeruk. Ground all ingredients spices accept lemon grass and lime leaves.
4. Tumis sere dan daun jeruk masukkan bumbu halus termasuk air asam, tumis hingga wangi dan masukkan dlm rebusan buntut, rebus selama 1 jam dgn api kecil atau smp empuk, tambahkan tomat. Saute lemongrass and lime leaves, tamarin juice too, add ground spices, saute until fragrant and add into oxtail soup. Simmer for 1 hour or until beef tender, add tomato.
5. Kalo daging sdh empuk, masukkan potongan bawang daun. If beef already tender, add green onion.
6. Sajikan bersama sambel trasi (haluskan cabe rawit merah, trasi dam garam secukupnya), dan pendamping . Serve with shrimp paste sambal (ground cayenne, shrimp paste and some salt), and complimentary

Note:
Bumbu rawon bisa dibuat sekaligus dalam jumlah banyak dan di simpan dlm frezzer bisa 3-4 bln
Proses masak bisa menggunakan presto, tp aku lbh suka memasak dgn api kecil.
