Soto Bandung – Bandung’s Beef Soup

SOTO BANDUNG – BANDUNG’S BEEF SOUP

Bahan/ingredients:
500 gr daging sapi has dalam.. 500gr tenderloin,
200 gr tulang iga/tulang sumsum. 200 gr beef ribs/bone marrow.
1 buah lobak putih, kupas, iris tipis. 1 chinese radish, peel. Finely slice
2000 ml air. 2000 ml water.
3 cm jahe, keprak. 3 cm ginger, crust.
2 lbr daun salam. 2 pcs bayleaf
2 lbr daun jeruk. 2 pcs lime leaves.
2 btg serai, keprak. 2 stalks lemongrass, crust.

Bumbu dihaluskan/ground spices:
8 buah bawang merah. 8 pce shallot.
6 siung bawang putih. 6 cloves garlic.
1 sdt lada bubuk. 1 tsp ground pepper.
1-1½ sdm garam. 1-1½ tbsp salt.

Pelengkap/condiment:
50 gr kacang kedelai, direndam air panas, tiriskan dan goreng. 50 gr soya bean, soak on hot water, strain and fried.
10 gr daun seledri, iris halus. 10 gr celery leave, finely slice.
1 btg daun bawang, iris halus. 1 stalk green onion, finely slice.
Emping goreng secukupnya. Some fried emping.
Bawang merah goreng secukupnya. Some fried shallot.
Sambal hijau (100 gr cabe rawit hijau, 4 siung bwg putih, 2 buah bwg merah, kukus dan blender dgn ½ sdt garam). Green Sambal(100 gr green chilipadi, 4 cloves garlic, 2 pcs shallot, steam and blender with ½ tsp salt)
Jeruk nipis or cuka. Lime or vinegar.

Cara/methods:
1. Rebus air, masukkan jahe, daun salam, daun jeruk dan sereh. Boil water, add ginger, bayleaf, lime leave and lemon grass.
2. Masukkan iga/tulang sum2 dan daging. Rebus dgn api kecil. Add ribs/bone marrow and beef. Simmer.
3. Haluskan bahan bumbu halus kecuali garam, tumis hingga harum dan masukkan ke dlm sup, masak hingga daging 80% empuk masukkan garam. Ground spices axcept salt, saute until fragrant and add into the soup, cook until 80a% beef tender add salt.
4. Angkat dan potong kotak daging yg sdh empuk. Lift up and chunk the tender beef.
5. Cara menyajikan Soto Bandung/how to serve Soto Bandung:
Letakkan dimangkuk potongan daging, lobak dan sup, taburi bwg daun, daun seledri, bwg goreng dan kacang kedelai goreng. Siapkan pula pendamping lain terpisah nasi, sambal hijau, jeruk nipis/cuka dan emping goreng. Put beef chunk, chinese radish and soup, topping with gren onion, celery leave, fried shallot and fried soya bean. Serve with rice, green sambal, lime/vinegar amd fried emping.

Note:
Kalo pakai tulang iga harus disaring air rebusannya spy bening. If you use ribs, drain the soup to get your clear soup.
