CUMI SAMBAL IJO – SQUID GREEN SAMBAL

Bahan/ingredients:
12 ekor cumi sero, cuci dan potong. 12 pcs sero squid, was and cut.
3 lbr daun jeruk. 3 pcs lime leave.
1 btg sereh, keprak. 1 stalk lemongrass, crust.
1 cm lengkuas, keprak. 1 cm galangal crust.
3 buah bwg merah, iris harus. 3 pcs shallot, finely slice.
3 siung bwg putih, iris halus. 3 pcs garlic, finely slice.
½ sdm cabe hijau halus. ½ tbsp ground green chilli.
4 buah tomat hijau, potong. 4 pcs green tomato, cut.
20 gr kemangi. 20 gr thai basil.
Garam dan lada secukupnya. Some salt and pepper.
2 sdm minyak sayur. 2 tbsp veggie oil.

Cara/method:
1. Panaskan minyak, tumis bwg merah, bwg putih, lengkuas, sereh dan daun jeruk hingga harum. Heat oil, saute shallot, garlic, galangal, lemongrass and lime leave u til fragrant
2. Masukkan tomat dan cumi, aduk hingga keluar air, masukkan sambal hijau, garam dan lada, masukkan kemangi aduk 1 menit. Add tomato and squid, stir up out of water, add green sambal, salt and pepper, add thai basil
Stir for 1 minutes
3. Sajikan panas di piring saji. Serve hot on plate.
