Ayam Goreng Terasi – Belacan Fried Chicken

AYAM GORENG TERASI – BALACAN FRIED CHICKEN

Bahan/ingredient:

1 ekor ayam kampung ukuran sedang (600-700gr), potong 8 bagian. 1 pcs farmer chicken medium size (600-700gr), cut on 8.
5 lbr daun jeruk. 5 pcs lime leave.
400 ml air panas. 400 ml hot water.
Minyak utk menggoreng. Oil for deepfry.

Bumbu/spice:
30 gr bwng merah. 30 gr shallot.
20 gr bwng putih. 20 gr garlic.
20 gr sambal cabe merah (2-3 buah cabe). 20 gr sambal red big chilli (2-3 pcs red big chilli).
5 gr gula merah. 5 gr brown sugar.
2 sdt terasi bakar. 2 tsp roasted belacan.
2 buah kemiri. 2 pcs candle nut.
½ sdt ketumbar bubuk. ½ tsp powdered coriander.
10 gr asam + 30 ml air panas. (ambil airnya saja. 10 gr tamarin + 30 ml hot water. (just take the tamarin water).
½ sdt garam. ½ tsp salt.
2 sdm minyak sayur untuk menumis. 2 tbsp veggie oil for saute.

Pelengkap/complimentary:
Sambal terasi(sisa bumbu+cabe rawit+air jeruk nipis). Sambal belacan (spices remaining+red chilipadi+lime juice)
Kemangi. Thai basil.
Tomat cherry. Cherry tomatoes.

Cara/method:
1. Haluskan bumbu, tumis bumbu dgn daun jeruk hingga harum, masukkan ayam, aduk 5 menit, tambahkan air panas, aduk rata, masak hingga air menyusut, sisihkan. Ground spices and saute with lime leaves until fragrant add chicken, stir for 5 minutes add hot water, stir well, cook until the water reduce set aside.
2. Panaskan minyak. Goreng ayam hingga kecoklatan. Heat oil. Fried chicken until brown.
3. Sajikan dgn nasi hangat, pelengkap dan sayur asam. Serve with warm rice, complimentary and vegetables in sour soup.

Sisa bumbu, bisa utk sambal atau utk bumbu nasi goreng belacan dan Nasi Goreng Terasi, Bihun Goreng Terasi, Mie Goreng Terasi, nikmat disajikan bersama Ayam Goreng Terasi dan sayur asam. can be use for sambal or for Belacan Fried Rice, Belacan Fried Vermicelli, Belacan Fried Noodle, very nice to serve with Belacan Fried Chicken and Vegetables In Sour Soup.
