SALAD AYAM KRISPI ALA VIETNAM – VIETNAMESE CRISPY CHICKEN SALAD

Bahan/Ingredients:
8 potong paha ayam atas dgn kulit. 8 pcs upper chicken thigh with skin.

Bumbu perendam/marinate:
6 siung bwng putih, bakar dan kupas. 6 large garlic cloves, roasted and peel.
3 cm jahe bakar dan kupas. 3 cm ginger, roasted and peel
1 sdt ketumbar bubuk. 1 tsp powdered coriander.
½ sdt ngohiong bubuk. 1 tsp powdered five spice
2 buah cabe hijau, cincang kasar.2 green chilli, roughly chopped
Kulit jeruk nipis parut dan air jeruk nipis. Grated zest and juice of 1 lime
Segengam daun ketumbar dan daun mint. Good handful of fresh coriander leaves and stalks
2 sdm kecap ikan.2 tbsp fish sauce.
1 sdm minyak canola. 1 tbsp canola oil.

Untuk sauce salad/For the Dressing:
Kulit lemon parut dan air lemon dr 1 buah lemon. Finely grated zest and juice of a lemon.
2 sdm kecap ikan. 2 tbsp fish sauce
1 sdm gula halus. 1 tbsp caster sugar.
1 sdt minyak wijen. 1 tsp sesame oil.
3 buah cabe rawit, cincang halus (buang biji, sesuaikan selera). 3 pcs red chillipadi, very finely chopped (seedless, adjust to taste)

Bahan salad/salad ingredients:
200 gr sawi putih, iris halus. 200 gr
Chinese cabbage leaves, finely slice
1 buah timun Jepang, iris tipis, beri garam remas pelan, cuci utk hilangkan garam. 1 pcs japanese cucumber/kyuri, finely slice, add some salt, gently squeeze, wash for reduce salt.
¼ buah paprika orange, iris panjang. ¼ pcs orange bellpepper, julliane.
1 buah prokoli, rebus, tiriskan. 1 pcs brocolli, boil, strain.
4 gr daun mint, cuci dan tiriskan. 4 gr mint leaves, wash and strain.
4 gr daun ketumbar, cuci dan tiriskan. 4 gr cilantro, wash and strain.

Cara/method:
1. Proses menghaluskan bumbu perendam dengan food prosesor (jgn terlalu halus). Ground spices with food procesor (not to soft)
2. Balur ayam dgn bumbu dan simpan semalam di kulkas (minimal 6 jam). Marinate chicken amd refrigerate for a night (minimal 6 hour)
3. Campur bahan saus salad, sisihkan. Mix salad dressing, set aside.
4. Siapkan bahan salad pada mangkuk besar dan campur dgn saus. Letakkan pada piring saji besar. Prepare salad on big bowl and mixed with dressing. Place on big. serving plate.

5. Beri minyak sayur pada teflon panggang. Letakkan ayam dgn bagian kulit menempel pada teflon, biarkan hingga kecoklatan dan kering, balik dan biarkan matang rata. Pour some vegetable oil on the pan. Place chicken, skin face down, on the pan. Let sit until golden and crispy. Flip and let it cook through

6. Potong ayam dan letakkan diatas salad, hias dan sajikan. Cut the chicken and put on salad, garnish dan sajikan.
