DAGING & TAHU BUMBU BALI – BEEF & TOFU BALINESE STYLE

Bahan/ingredients:
1000 gr daging sapi, iris. 1000 gr beef, slice.
1 buah tahu besar, potong dan goreng. 1 pcs big tofu, cut and fried
700 ml air. 700 ml water.
4 lbr daun jeruk. 4 pcs lime leaves.
1 cm lengkuas. 1 cm galangal.

Bumbu/seasoning:
20 buah bwg merah. 20 pcs shallot
10 siung bwg putih. 10 cloves garlic.
10 cabe merah besar. 10 pcs red big chili.
4 buah kemiri. 4 pcs candle nut.
6 cabe keriting. 6 pcs red curly chili.
5 rawit (sesuai selera). 5 chili padi (to taste)
2 cm jahe. 2 cm ginger
2 buah tomat segar. 2 fresh tomato.
1 sdm air asam jawa. 1 tbsp tamarind water
2 sdt garam. 2 tsp salt
1 sdm gula merah. 1 tbs brown sugar
3  sdm kecap manis. 3 tbsp dark soy sauce
1 sdt terasi. 1 tsp shrimp paste

Sambal:
50 gr cabe rawit merah. 50 gr red chili padi.
3 buah bawang merah, goreng ½ matang. 3 pcs half fried of shallot.
1 siung bawang putih, goreng ½ matang. 1 clove of half fried garlic
¼ sdt garam. ¼ tap salt.
½ sdt trasi bakar. ¼ tsp roasted shrimp paste.
1 sdm petis. 1 tbsp black shrimp paste.

Cara/method:
1. Haluskan dan tumis bumbu hingga harum. Ground and saute seasoning until fragrant.
2. Rebus daging bersama lengkuas dan daun jeruk. Boil beef with galangal and lime leaves.
3. Masukkan bumbu halus dan tahu goreng kedlm sup, masak hingga air memyusut, masukkan garam aduk rata. Add ground spice and fried tofu on soup, cook until the water reduce and add salt, stir well.
4. Haluskan semua bahan sambal. Ground all sambal ingredients.
5. Sajikan bersama masakan lain dan nasi putih. Serve with other side dish and rice.

Note:
Daging bisa diganti telur rebus/ceplok or bandeng (digoreng dulu). Beef can be change with boiled egg/sunny sideup or milkfish (fried)
