Lumpia Bihun – Vermicelli Springroll

LUMPIA BIHUN – VERMICELLI SPRINGROLL

Bahan/ingredients.
200 gr bihun AA, rendam smp lembek, tiriskan. 200 gr vermicelli AA, soak until soft, strain.
1 btg wortel, serut kasar. 1 stalk carrot, roughly grated.
6 lbr daun seledri, iris halus. 6 pcs celery, finely slice.
1 btg daun bwg, iris halus 1 stalk green onion, finely slice.
3 siung bwg putih, cincang. 3 clove garlic, chop.
2 buah bwg merah, cincang. 2 pcs shallot, chop.
100 ml air/kaldu. 100 ml water/broth.
3 sdm minyak sayur utk menumis. 3 tbsp veggie oil for saute.

Kulit lumpia siap pakai. Springroll sheet ready to use.

Bumbu/seasoning:
2 sdt kecap asin. 2 tsp soy sauce.
2 sdt kecap raja rasa. 2 tsp raja rasa soy sauce.
⅛ sdt laba bubuk. ⅛ tsp powdered pepper.
1 sdt kaldu ayam bubuk. 1 tsp powdered chicken.
Garam secukupnya. Some salt.

Saus kacang/peanut sauce:
25 gr kacang tanah sangrai. 25 gr roasted peanut.
1 buah cabe merah besar buang biji. 1 pcs red big chilli.
4 cabe rawit merah (sesuaikan). 4 pcs red chilipadi (adjusted)
¼ sdt garam. ¼ tsp salt
½ sdt gula. ½ tsp sugar.
½ sdt cuka apel. ½ tsp apple vinegar.
1 siung bwg putih. 1 clove garlic.
100 ml air panas. 100 ml hot water.

Cara/method:
1. Panaskan minyak, tumis bwg merah dan bwg putih hingga harum, masukkan wortel, bihun, kaldu dan bumbu2, aduk rata dan masukkan pula bwg seledri dan bwg daun, aduk rata. Heat oil, saute garlic and shallot until fragran, add carrot, vermicelli, broth and seasoning, stir well and add celery and green onion, stir well,
2. Haluskan kasar kacang tanah sangrai, sisihkan, haluskan cabe dan bwg putih. Rebus cabe, bwg putih, air, gula dan garam hingga didih, masukkan kacang tumbuk. Bila saus sdh cukup rasanya tambahkan cuka sesuai selera. Roughly ground peanut, set aside. Boil chilipadi, garlic, water, sugar and salt, add ground peanut.
3. Bungkus spt amplop bihun dgn kulit lumpia. Goreng hingga kecoklatan. Wrap fried vermicelli and folt an anvelope. Fried until golden
4. Sajikan lumpia bihun dgn saus kacang. Serve vermicelli springroll with peanut sauce.
