KRENGSENGAN DAGING – SAUTEED SAVORY BEEF

Bahan/ingredients:
500 gr daging sandung lamur,. 500 gr brisket,
4 lbr daun jeruk. 4 pcs lime leaves.
2 cm lengkuas. 2 cm galangal.
2 cm jahe. 2 cm ginger.
2 lbr daun salam. 2 pcs bayleaves
Garam secukupnya. Some salt.

Bumbu halus/ground spices:
3 buah cabe merah besar. 3 pcs red big chili.
3 buah cabe merah keriting. 3 pcs red curly chili.
5 buah cabe rawit merah. 5 pcs red chilipadi.
10 siung bwng putih. 10 cloves garlic.
6 buah bwng merah. 6 pcs shallot
3 butir kemiri. 3 pcs candle nut.
1 sdt ketumbar bubuk. 1 tsp powdered coriander.
1 sdm petis udang. 1 tbsp black shrimp paste.
¼ sdt jinten bubuk. ¼ tsp powdered cumin.
½ sdt terasi. ½ tsp shrimp paste.
2 sdm kecap manis. 2 tbsp dark sweet soy sauce.

Sambal:
50 gr cabe rawit merah. 50 gr red chili padi.
3 buah bawang merah, goreng ½ matang. 3 pcs half fried of shallot.
1 siung bawang putih, goreng ½ matang. 1 clove of half fried garlic
¼ sdt garam. ¼ tap salt.
½ sdt trasi bakar. ¼ tsp roasted shrimp paste.
1 sdm petis. 1 tbsp black shrimp paste.

Cara/ingredients:
1. Didihkan air bersama daun jeruk, daun salam, jahe, ¼ buah nanas (utk pengempuk, boleh di skip) dan lengkuas, masukkan daging, masak dgn api kecil hingga daging empuk (45 menit). Boiling water with lime leaves, bayleaf, ginger, ¼ pcs pineapple (for tenderlizer, optional) and galangal, add beef. Simmer until beef tender (45minutes).
2. Angkat dan iris daging. Lift up beef and slice.
3. Haluskan dan tumis bumbu hingga harum, masukkan daging, masukkan 200 ml kaldu daging dan garam. Aduk rata, masak hingga kaldu menyusut, angkat. Ground spices and saute until fragrant, add beef, add 100 ml beef broth and salt. Stir well until reduced beef broth, lift up.
4. Haluskan semua bahan sambal. Ground all sambal ingredients.
5. Sajikan bersama menu lain.. Serving with other menu.

Note;
Bisa diproses dgn slowcooker, setelah ditumis bumbu dan dagingnya dan tambahkan kaldu, masukkan ke dlm slowcooker dgn setting low or warm, selama 4 jam pasti empuk. Can process using slow cooker after you saute the ground spices and beef. Add some broth, setting on low or warm heat, around 4 hour, so the beef will be tender enough.
