ASAM ASAM IGA SAPI – BEEF RIBS in SOUR SOUP

Bahan/ingredients:
1000 gr iga sapi. 1000 gr beef ribs.
2 cm lengkuas. 2 cm galangal.
2 lbr daun salam. 2 pcs bayleaf.
10 cabe rawit. 10 chilipadi.
2 cm jahe. 2 cm ginger.
15 buah tomat hijau, potong. 15 pcs green tomato, cut.
6 buah blumbing sayur, potong 2. 6 pcs sour star fruits, cut on 2.
2000 ml air. 2000 ml water.

Bumbu halus/ground spices:
6 buah bwg merah. 6 pcs shallot.
4 siung bwg putih. 4 cloves garlic.
5 sdm air asam jawa (sesuaikan). 5 tbsp tamarind water.(adjust)
4 buah kemiri. 4 pcs candle nut.
2 sdm kecap manis. 2 tbsp dark sweet soy sauce.
1½ sdt terasi bakar. 1½ tsp roasted shrimp paste.
Garam secukupnya. Some salt
2 sdm minyak sayur. 2 tbsp veggie oil.

Cara/method:
1. Didihkan air bersama lengkuas, jahe dan daun salam. Masukkan iga rebus dgn api kecil atau di presto.
2. Haluskan dan tumis bumbu (kecuali garam dan kecap manis). Ground and saute spices (except salt and dark sweet soy sauce).
3. Masukkan bumbu ke dlm sup iga, aduk rata, masak hingga iga empuk. (aku proses dgn slowcooker sejak kmrn pkl 18:00…..sangat empuk). Add spices into ribs soup, stir well, cook until the ribs tender. (I’m processed using slowcooker, started from yesterday 6PM……so tender)
4. Masukkan tomat, blimbing sayur, cabe, kecap manis, air asam dan garam. Add tomato, sour star fruit, chilipadi, dark sweet soy sauce, tamarind water and salt.
5. Hidangkan panas dgn nasi. Serve hot with rice.

Note:
1. Memproces dgn slowcooker: letakkan semua iga dlm panci keramik, siram dgn air mendidih. Masukkan tumisan daging, masak dgn posisi auto. Memproces with slowcooker : put all the ribs in a ceramic pot , pour with boiling water . Add stir seasoning , cook with auto position .
2. Bila tidak memiliki slow cooker atau presto, tambahkan nanas saat merebus daging, maka daging akan lbh cepat empuk. If you don’t have slow cooker or presure cooker, add some pineapple when ypu boiling beef, so the beef more fast tender.
