Soup Ayam Rempah – Herbs Chicken Soup


SUP AYAM REMPAH – HERBS CHICKEN SOUP

Bahan/ingredients:
1 ekor ayam kampung ukuran sedang, potong 12 bagian. 1 pcs farmer chicken medium size, cut ob 12 pcs.
1500 ml air. 1500 ml water.
½ buah bawang bombay, iris halus. ½ pcs onion. Finely slice.
2 cm jahe, memarkan. 2 cm ginger, crust.
2 cm kayu manis. 2 cm cinnamon.
2 butir cengkeh. 2 pcs cloves.
Garam secukupnya. Some salt.
4 buah kapulaga. 4 pcs javanese cardamom
2 cm jahe. 2cm ginger.
1500 ml air. 1500 ml water.

Bumbu/spice:
6 siung bwng putih. 6 cloves garlic.
3 buah bwng merah. 3 pcs shallot.
½ buah pala. ½ pcs nutmeg.
1 sdt lada hitam butir. 1 tsp black pepper corn.

Pelengkap/complimentary:
2 btg seledri. 2 stalks celery.
Bwng merah goreng. Fried shallot.
Jeruk nipis. Lime.
Sambal terasi. Sambal belacan.
Krupuk. Crackers.
Perkedel. Potato cake.

Cara/Method:
1. Masukkan kayu manis, kapulaga. Jahe dan cengkeh dlm kantong bumbu dan masukkan dlm air rebus. Add cinnamon,jawanese cardamom, ginger and cloves on herbal bag and add into boiling water.
2. Masukkan ayam dlm air mendidih. Add chicken on boiled water.
3. Haluskan dan tumis bumbu bersama bwng bombay, masukkan dlm sup ayam. Ground and saute spices with pnion, add into chicken soup.
4. Bila ayam sdh empuk. Masukkan wortel, buncis dan kol, masukkan garam, masak selama 5 menit dan siap disajikan. If chicken tender. Masukkan garam dan daun kare segar. Add carrot and cabbage. Add salt and fresh curry leaves, cook for 5 minutes
5. Sajikan bersama nasi dan pelengkap. Serve with rice amd complimentary.
