SAYAP AYAM PEDAS & ASAM – JAPANESE SPICY & SOUR CHICKEN WINGS

Bahan/ingredients:
12 buah sayap ayam, potong 2 bagian dan buang bagian yg kecil. 12 pcs chicken wings, cut on 2, throw it the small part.

Perendam/marinate:
1 buah jeruk nipis. 1 pcs lime.
½ sdt garam. ½ tsp salt.
⅛ sdt lada bubuk. ⅛ tsp powdered pepper.
½ sdt ngohiong bubuk. ½ tsp fivestar.
2 sdt bwg putih bubuk. 2 tsp garlic powder. (Jay’s)

1 sdm mirin. 1 tbsp mirin.
3 sdm tepung beras. 3 tbsp rice flour.
1 sdm maizena. 1 tbsp cornstrach.

Saus/sauce:
2 sdm gula. 2 tbsp sugar
½ sdm kecap asin. ⅓ tbsp soy sauce. (kikkoman)
2 sdm air. 2 sdm water.
½ sdm cuka salad. ½ tbsp shu/japanese vinegar for salad.
½ sdm sake. ½ tbsp sake.
1 sdm tabasco. 1 tbsp tabasco.
1 sdt mustard. 1 tsp mustard.
1 sdm paprika bubuk. 1 tbsp cayenne

Cara/method:
1. Lumuri sayap ayam dgn bumbu perendam dan simpan di kulkas selama 4 jam. Marinate chicken wings and refrigerate for 4 hour.
2. Panaskan minyak dan goreng sayap ayam hingga kecoklatan, tiriskan. Heat oil and deepfry chicken wings until golden, strain.
3. Panaskan penggorengan. Masukkan gula, aduk hingga kecoklatan, masukkan campuran kecap asin, air, mustard, sake, cuka salad dan paprika bubuk, aduk dengan cepat. Masukkan sayap ayam goreng aduk hingga seluruh sayap terlumuri. Preheat wok, add sugar, stir until brown, add mixed soy sauce, water, mustard, sake, shu/japanese vinegar, and cayenne, stir faster. Add fried chicken wings, stir well until the sauce coating chicken wings.
