Ayam Rempah Berpasir – Sandy Spice Chicken

AYAM REMPAH BERPASIR – SANDY SPICE CHICKEN

Bahan/ingredients:
1 ekor ayam kampung besar, cuci dan potong. Lumuri jeruk nipis diamkan 1 jam dlm kulkas. 1 pcs farmer chicken big size, wash and cut. Marinade and refrigerate for 1 hour.
3 btg sereh, keprak. 3 stalks lemongrass, crust.
4 cm lengkuas, parut. 4 cm galangal, grated.
2 cm jahe, keprak. 2 cm ginger, crust.
10 lbr daun jeruk. 10 pcs lime leaves.
300 ml air kelapa. 300 ml coconut water.

Bumbu halus/ground spices:
12 buah bawang merah. 12 pcs shallot.
8 siung bawang putih. 8 cloves garlic.
8 buah kemiri. 8 pcs candle nut.
½ sdm ketumbar bubuk. ½ tbsp powdered coriander.
½ sdt jintan. ½ tsp caraway.
1 sdt merica bubuk. 1 tsp powdered pepper.
3 cm kunyit bakar & kupas. 3 cm turmeric, roasted and peeled.
20 gr asam jawa, ambil airnya. 20 gr java tamarin, take the water.

Pasir kelapa/coconut sand:
½ buah kelapa parut. ½ pcs grated coconut.
½ sdm air rebusan ayam berbumbu. ½ tbsp chicken broth.
4 lbr daun jeruk, iris halus. 4 pcs lime leave, finely slice.
Garam secukupnya. Some salt.

Sambal bawang/sambal onion:
50 gr cabe rawit merah. 50 gr red chili padi
4 buah bwng merah, cincang kasar. 4 pcs shallot, roughly chop
4 siung bawang putih. 4 cloves garlic.
1 sdt terasi bakar. 1 tsp roasted shrimp paste.
Garam secukupnya. Some salt.
6 sdm minyak sayur. 6 tbsp veggie oil.

Cara/method:
1. Haluskan bumbu dan lumurkan pada ayam dan simpan di kulkas semalam. Ground spices and marinate to the chicken, and refrigerate a nite.
2. Esok hari, rebus air kelapa bersama jahe, lengkuas, sereh dan daun jeruk, masukkan ayam dan masak hingga empuk, dan air menyusut, angkat ayam dan sisihkan. On next day, boil coconut water with ginger, galangal, lemongrass and lime leaves, add the chicken and boil until the chicken tender and reduce water, lift up the chicken and set aside.
3. Rebus sisa air rebusan hingga makin susut dan mengental, sisihkan. Boil remaining boiling coconut water until more reduce and thickener, set aside.
4. Utk sambal/for Sambal:
Haluskan cabe, bwg putih, terasi, dan garam. Tumis bersama bwg merah cincang, sisihkan. Ground chili, garlic, shrimp paste and salt, Saute with chopped shallot until well cook.
5. Panaskan minyak, goreng ayam hingga kecoklatan, angkat. Heat oil, fried the chicken until brown, lift up.
6. Membuat pasr kelapa/how to make coconut san: Campur kelapa parut dgn ½ sdm air rebusan ayam berbumbu dan irisan daun jeruk sangrai hingga kecoklatan, masukkan ayam goreng dan aduk. Mix grated coconut with ½ tbsp chicken broth and sliced lime leaves, roasted until golden. Add fried chicken and stir.
7. Sajikan bersama nasi, lalapan dan sambal. Serve with Rice, salad and sambal.

Note:
Bumbu ini bisa utk masak bebek dan daging. Hanya perlu menambahkan jahe utk penghilang amis pada bebek. This spice can be use to cook duck or beef. Only need to add ginger to prevent the natural smell of the duck.
