MISO RAMEN ala FLORENCE

Utk 4 porsi. For 4 serving.

Bahan/ingredients:
4 bgks mie ramen mentah, rebus dan tiriskan. 4 pack raw ramen noodle, boil and strain.
4 btr Telur, rebus selama 4 menit dan kupas setelah dingin. 4 pcs egg, boiling for 4 minutes and peel when it is cool.
½ kaleng rebung, iris memanjang. ½ can bamboo shoot, jullien.
300 gr samcam, irisan shogayaki, gulung dan tusuk dgn tusuk gigi. 300 gr pork belly, shogayaki slices, roll and prick with a toothpick.
2000 ml kaldu ayam. 2000 ml chicken stock.

Bumbu utk samcam dan rebung/ seasoning for pork belly and bamboo shoot:
400 ml air. 400 ml water.
1 sdm mirin. 1 tbsp mirin.
3 sdm kecap manis. 3 tbsp dark sweet soy sauce.
2 sdm kecap cap jamur. 2 tbsp mushroom soy sauce.
2 sdm kikkoman. 2 tbsp kikkoman.
½ sdt lada bubuk. ½ tsp pepper powder.
1 sdt ngohiong bubuk. 1 tsp five star.

Bumbu utk sup/seasoning for soup:
8 sdm pasta miso. 8 tbsp miso paste.
3 sdt biji wijen. 3 tsp sesame seed.
3 sdm dobanjiang. 3 tbsp chili bean sauce.
6 siung bwng putih, parut. 6 cloves garlic, grated.
2 buah bwg merah, parut. 2 pcs shallot, grated.
1 sdt lada bubuk. 1 tsp pepper powder.
1 sdt gula. 1 tsp sugar.
2 sdm mirin. 2 tbsp mirin.
2 sdm sake. 2 tbsp sake.
2 cm jahe, parut. 2 cm gunger grated.
1 sdm minyak wijen utk menumis. 1 tbsp sesame oil for saute.

Pelengkap/complimentary:
Bwg daun, iris. Green onion, slice.
Bwg putih parut. Grated garlic.
Wakame, rendam air panas, tiriskan. Seaweed, soak on hot water, train.
Nori.
Togarasi. Mised dry chilli

Cara/method:
1. Memasak sancam dan rebung/how to cook pork belly and bamboo shoot:
Rebus air bersama bumbu, masukkan rebung dan sancam, masak hingga empuk dan berwarna kecoklatan, angkat rebung dan sancam. Boiling water with seasoning add bamboo shoot and pork belly until tender and brown.
Biarkan air rebusan suhu ruang, masukkan telur rebus, dan rendam hingga berubah warna. Let the cooking water at room temperature put a poached egg, and soak until it changes color.
2. Membuat soup/how to cook the soup:
Didihkan kaldu ayam. Boiling chicken stock.
Haluskan biji wijen, bwg putih, bwg merah dan jahe, tambahkan bahan lain. Ground sesame seed, garlic, shallor and ginger. Add other seasoning.
Tumis hingga harum dan masukkan ke kaldu, masukkan pasta miso, sake dan mirin. Saute until fragrant and add into the stock, add miso paste, sake and mirin.
3. Penyajian/how to serve: Rebus mie, tiriskan dan taruh dalam mangkuk, beri samcam roll, rebung dan telur, tuang soup miso, beri pelengkap dan sajikanpanas.boiling water, strain and place on a bowl, add pork belly roll bamboo shoot and egg, pour the miso soup, add complimentary and serve hot.
