KWE TIAU KUAH PEDAS – SPICY CHAR KWE TIAU SOUP

Sajian utk 1 porsi. Single serving.

Bahan/ingredients;
100 gr kwe tiau. 100 gr char kwe tiau
2 bundel sawi hijau, potong 2 cm. 2 bundle mustard greens, cut 2 cm.
4 ekor udang kupas. 4 pcs skinless shrimp.
1 btr telur kocok lepas. 1 pcs beaten egg.

Bumbu halus/ground spices:
3 buah bwng merah. 3 pcs shallot
2 siung bwng putih. 2 cloves garlic.
2 btr kemiri. 2 pcs candlenut.
1 sdm cabe halus. 1 tbsp ground chili.
4 buah cabe rawit merah (sesuaikan selera). 4 pcs red chilipadi (to taste).
½ sdt terasi bakar. ½ tsp roasted shrimp paste.
½ sdt ketumbar bubuk. ½ tsp powdered coriander.
Garam dan lada secukupnya. Some salt and pepper.
2 sdm minyak sayur utk menumis. 2 tbsp veggie oil fpr saute.

Pelengkap/complimentary:
Bawang merah goreng. Fried shallot.
½ sdm ebi kering, haluskan dan sangrai. ½ tbsp dry shrimp, ground and roast.

Cara/method:
1. Haluskan bumbu dan tumis hingga harum, sisihkan. Ground spices and saute until fragrant, set aside.
2. Panaskan 1 sdt minyak masukkan telur kocok aduk, sisihkan, masukkan udang, aduk hingga berubah warna. Masukkan bumbu, kwetiau, batang sawi dan kaldu, aduk rata, masukkan daun sawi. Heat 1 tbsp veggie oil, add beaten egg, stir, set aside, add shrimp, stir until changing colo. Add spices, kwetiau, mustard greens stem and chicken broth, stir well, add mustard green leaves.
3. Letakkan diatas piring saji, taburi ebi sangrai dan bwg merah goreng. Place on dish, sprinkle with roasted dry shrimp, and fried shallot
