BABI TORE MANADO – MANADONESE CRISPY PORK

Bahan/ingredients:
1000 gr daging sancam. 1000gr pork belly
1½ sdm cuka masak. 1½ tbsp cooking vinegar
8 siung bwg putih, haluskan atau ½ sdm bwng putih bubuk. 8 cloves garlic, ground or ½ tbsp garlic powder. (Jay’s brand)
Garam dan lada secukupnya. Some salt and pepper.

Bumbu halus/ground seasoning:
8 bawang putih. 8 cloves garlic.
10 buah bwg merah. 10 pcs shallot.
2 sdm cabe merah keriting halus..2 tbsp ground curly red chili.
20 buah cabe rawit merah (sesuaikan selera). 20 pcs red chilipadi (to taste)
6 btr kemiri. 6 pcs candle nut.
1 buah tomat besar, potong. 1 pcs tomato big size, cut.
1 buah air jeruk nipis. 1 pcs lime juice.
2 cm jahe. 2 cm ginger.
1 sdm gula pasir. 1 tbsp sugar.
Garam secukupnya. Some salt.

Cara/method:
1. Membuat babi tore/how to cook crispy pork:
** Tusuk bagian kulit dgn ujung pisau. Puncture the skin with the tip of a knife.

** Buat guratan pada sancam tidak putus di kulit. Tusuk dgn tusuk sate sebelum direbus. Make scratches on an elongated pork belly and skewer with a skewer before being boiled.

** Rebus hingga sancam empuk. Boil pork belly until tender.
** Tiriskan dan diamkan hingga babi suhu ruang. Strain pork and keep room temperature.
** Lumuri kulit babi dgn cuka, bwg putih garam dan lada sekitar 1-2 jam. Marinate pork with vinegar (on skin), salt and pepper. Let stand for 1-2 hour.
** Panaskan minyak dan goreng hingga kering. Tiriskan dan iris sblm disajikan. Heat oil and fried pork until crispy. Strain and slice before serve.
2. Membuat bumbu/how to make sauce:
** Panaskan minyak dan tumis bumbu hingga harum. Masukkan tomat dan masak hingga tomat matang, masukkan air jeruk, gula dan garam. Heat oil and saute seasoning until fragrant. Add tomato and stir until tomato tender. Add lime juice. Sugar and salt.
3. Penyajian/how to serve:
** Letakkan daging yg sdh diiris dan siram dgn saus.
** Tore bisa utk campuran nasi goreng. Tore can be use for fried rice.
** Untuk topping mie juga enak. Yummy for noodle topping.

Note:

1. Sblm di goreng, lumuri sancam dgn tepung sagu/beras, agar saat digoreng minyak tdk terlalu meletup. Before you fry it, powder the pork belly with some cornstrach or rice flour. So that the oil won’t burst.
2. Simpan air rebusan babi utk sup. Keep pork broth for soup.
